Free sample courtesy of the brewer Dany @ Fantome, Soy, Belgium. Rating from a 75cl bottle from Dany, enjoyed at home. Pours a lightly hazy amber, good creamy off-white head. Aroma is spice and saison yeast. Taste is beautifully spicy yet has a sweet, almost wine-like yeasty depth. Mouthfeel is a bit scuzzy, but its sweet spicy vinous character really resonates with me. And judging by the amount of empty spice jars in the Fantome brewshed, Dany doesn’t hold back on the spice

750 ml btl was a gusher and coated our 12 foot ceiling. Gotabout 2 Oz. of yeasty flat beer out of a $20 btl.

Bottle courtesy of Maakun shared at de zuipschuit. Very funky, doughy, yoghurty, floral and herbal, flower. Light sweet, light bitter, very minerallike, light sour. Milky and minerallike texture, smooth and light carbonation though it was a huge gusher. Like!

Maakun (3932) - The Hague, NETHERLANDS - APR 14, 2016
Bottle shared. Massive gusher. Pours murky golden with off white head. Lots of herbs, lemon balm, peach, milky, more herbs, funk, lemon. Light sweet and sour. Medium bodied with a bit low carbonation. Decent aroma but looks horrible and the gushing doesn’t help.

Pours a hazy yellowish/gold color. Aromas of tart fruit, bread, hint of citrus, and yeasty. Flavor is malty/citrus. Leaves a yeasty orange aftertaste. Almost like a Belgian Wit.

Bottle, bb end 2018. Very hazy gold with a white head that lasts quite well. Aroma of grapefruit and lemon juice, bretty twang, potpourri, crackers. Somehow both creamy and acidic texture. Bits of citrus pulp? Lots of citrus that comes across as lemon juice that’s been sitting for a while. Hay, nectarines, pineapple, cloves, lemon thyme, other burnt spices (not over toasted, more like someone’s doused them and set them on fire). Moderately astringent at the end. A second glass is even murkier but is softer and grainier. By this time I’m thinking it will go better with rich food than by itself. And it goes very well indeed with wild boar pate. Interesting, but not an unalloyed pleasure.

Pours a hazy pale yellow with a high rocky white head that leaves nice lacing. Too much carb maybe? Anyway... Nose is of herbs, soap and hay. Taste is of perfume, ash (cigarettes), herbs, light cereals and quite weird overall. The smoky/ashtray off flavor subsides after a while or maybe my brain just decided to start ignoring it. Medium body, medium carbonation. Overall one of the weirdest Fantôme I’ve had thus far butt I guess this is what you start getting when you never repeat a recipe...

Minderbinder (3276) - Québec, Quebec, CANADA - FEB 2, 2016
Bottle 750ml. Pours blond with very high soapy white head. Aroma is of citronella, muskoil TM, fruits, slightly burnt stuff. Taste is of burnt malt, spices, alcohol, some acidity. Palate: Medium body. Very high carbonation. Overall: Burnt. Off. Weird. Drain pour; flirting with the offense, but still not harmfull for health I guess.

Bottle (750 ml) shared at tasting. Gusher. Clear pale yellow with a medium white head leaving little lacing. Aroma is of lemongrass, mint, smokey notes, mild funk and mineral notes. Taste is minty and lemongrass forward with smokey notes, a rather strong herbal presence and mineral notes. Light to medium body. Off putting foamy carbonation that really kills the mouthfeel. Lemongrass finish. Usual Fantôme weird stuff that can be either a hit or a miss and this one fall into the latter category unfortunately. Not super bad, but the mouthfeel is poor.
