750 ml bottle from Sam’s in Chicago. Purchased in November ’06, assuming its the 2006 version. Bright copper amber colour with a mostly lasting creamy, frothy, and rocky off-white head. Heavenly aroma of bread, citrus, pungent hops, pepper, pineapple, spice (grains of paradise perhaps?), passion fruit, and light yeast with tart cherry and candyish notes. Crisp toasty cereal malts to start with a balance of tartness and sweetness in the middle, finishing with a noticeable spicy and assertive peppery zing. Light to medium bodied, juicy and refreshing mouthfeel with a dry warming spicy finish. As with all the Fantomes I’ve had incredibly drinkable for 8% abv, especially surprising given the spicy heat lingering on the finish.

Pours a very hazy gold with a ginormous head. Aroma is typical saison farmhouse funk, grassy, herbal, and musty. Flavor is nice, there’s a sharp bite initially, which fades into a smooth grassy hoppiness. Finishes dry and tart.

UPDATED: APR 11, 2005 Hazy yellow-ish. Nice head and lace. Sweet, lemonade, spice (ginger, orange peel, coriander...), citrus, dry, light bitter.

I don’t know how old this beers is but I can assure you it is old, it was covered in dust so I know it’s not light struck either.
Hell Yeh, I just had the perfect pour into my Trois Pistoles chalice, it looks like something out of a Michael Jackson book. A rich copper, more orangeish body, fluffy cream colored head that slowly subsided into a velvety cap and ring of lacing.
The aroma and flavor are incredibly earthy, smells of those gigantic bales of hay, very rural and woodsy. Huge notes of wheat, rather; my new terminology, “barnyard.” Quite yeasty; this is strange but it reminds me of family vacations where we went spelunking, Printemps gives off this musty mildew stagnate impression found in caves. Noticeable notes of clove, coriander, rosemary, apricots, black pepper, and more pronounced remarks of Granny Smith apples. Ending with a nice fizzy champagne like palate with a dry bitter sweet tart apple finish.
This is a rather complex but enjoyably creation, I probably would not spend $13 on another 750ml bottle, but I Highly Recommend trying it at least once!

Bottle. Poured into a tulip glass a cloudy straw yellow color with a fluffy white head. The aroma is strong lemon lime aroma mixed with some medicinal notes. Smells like a lemon lime soda. Light mouthfeel. The medicinal notes in nose is stronger in the taste. Light lemon in the flavor as well with some bitterness that builds in the end. It’s decent for a summer brew.

the cork exploded out of the bottle. the body is cloudy golden yellow with a big creamy, pillowy tall white head. lots of fiss in the body. aroma is lightly sour, dried apricot, barnyard too. body is light to medium, lots of carbonation. dry and tangy flavor, some sweet stone fruityness like peach and apricot. a little peppery like mild white pepper. faint dryish alcohol finish but very pleasant. what a great spring saison, a nice way to come down from alcohol heavy winter beers, while still being a bold saison.

Bottle. 25.4 oz. Split with Braden. Pours speckled, hazy orange gold with a frothy, white head. Aroma of pine, cork, citrus, hops, and wheat. Medium bodied with a tangy, fruity mouthfeel. Quick, tight finish. Average saison.

Nice, even, deep gold, lightly hazy beer with a lasting white, wispy head. Oddly enough, this beer has a bit of a floral character. Woody, bready, and pleasantly fruity and floral. A little sour, malty, and very well balanced. Finishes a little wood and dry. More bready malt in the mid palate with some fruitiness. Some alcohol evident in the flavor as it warms, but it's not a typical saison in my mind. There is a light sourness which adds to complexity of flavor. Lighter bodied and moderate carbonation, as well as a dry mouthfeel. Again, not the typical Saison in my mind, but very good. I'm glad I have another one in the cellar.

Poured opaque orange with yellow yeast sediment floating around. Huge off white head. Aroma is sour fruits, orange peel, belgian yeast, with some vacuum like odors. Flavor is dried fruit, some lemon, orange, and pear. Slightly sour and bitter with a flat dry finish that leaves a apricot hoppiness behind.
