Pours an opaque wet straw. Head disappears quickly but it laces nicely. Lots of beautiful peppery citrus in the nose. This smells awesome. Not quite as creamy a mouthfeel as say, the Dupont, but sharper, like the nose. Falls just short of exciting in taste, but unique and true to the style at the same time. And who doesn’t love the ghost? One of my favorites in the category.

Pours cloudy yellow with a huge, foamy white head. Aroma is musty, zesty, pepper, something familiar I cannot pinpoint. Very nice balance between sourness and smoothness in the flavor. Drinkable yet quite flavorful. Yeasty, tart, and a little citrusy, grapes. This is my first fantome beer but certainly not my last.

Bottle. Notes of bright fruity bubble gum, light spice, and a bright watered down grapefruit citrus notes. Touch of lemon sourness. Big carbonation. Nice body. Well made. Great bottle. Complex, well rounded, rustic champaign fruity citrus saison. Very nice.

Here’s to Toby. thanks for introducing me to Iris and changing my worldview of beer. light peppery note, some horse blanket and a little lemon citrus nose, all delicate. hazy yellow gold, towering white head. more citrus and some cranberry tartness. balanced with a thin honey body. cheers man, RIP

Pours a hazy apricot color with a large, frothy white head. Aroma holds loads of nectar fruit, including peach, mango, and kiwi, along with notes of apple and pear-- awesome fruitiness on this nose, I’m loving it so far. Flavor is divine-- tons more nectarine and kiwi notes, with some wheat and yeast that really add a beautiful depth to this beer. Palate is crisp, clean, and refreshing; absolutely perfect for a hot summer day. Top notch saison.

I am really enjoying this brew. Aroma is dominated lemon and grass with a hint of alcohol. Appearance is a pale yellow like lemon juice and minimal head. Taste is lemon and vanilla. Palate is a bit thin and refreshing. Really nice beer.

750ml, acts like champagne, lemony, very lightly tart, buttery, spicey, grassy, herbally. So unique I’m throughly impressed. Amazing saison.
