750 into trusty Duvel glass. I must confess: I’ve neglected Fantome until now. I was exposed to Fantome in my beer geek infancy, and I wasn’t ready. Too funky, too weird. Now, I don’t think it’s weird at all, simply beautiful. Uncorked this one with a pop and was immediately assailed by the funk. A nose in the glass discovers snappy carbon dioxide released from the bubbles and yeasty acidity I associate with older, well-aged bottles of Orval. As it warms, dark twiggy things come out in the smell. Flavor and texture in this piece are perfectly married. Initially there’s a rush of limey acid, mouthwatering, riding the tickling carbonation. The middle stays juicy, but other things come to play too. It doesn’t get bogged down in cottony yeastiness like other wild brews, but rather the cardamom and light spiciness stays light and vibrant. The finish is long and lingering, and different waves of flavors drop in to visit: honeydew, lightly buttered bread, light sea salt. Awesome.

Pours a hazy pale yellow with a high rocky white head that leaves nice lacing. Too much carb maybe? Anyway... Nose is of herbs, soap and hay. Taste is of perfume, ash (cigarettes), herbs, light cereals and quite weird overall. The smoky/ashtray off flavor subsides after a while or maybe my brain just decided to start ignoring it. Medium body, medium carbonation. Overall one of the weirdest Fantôme I’ve had thus far butt I guess this is what you start getting when you never repeat a recipe...

Bottle 750ml. Pours blond with very high soapy white head. Aroma is of citronella, muskoil TM, fruits, slightly burnt stuff. Taste is of burnt malt, spices, alcohol, some acidity. Palate: Medium body. Very high carbonation. Overall: Burnt. Off. Weird. Drain pour; flirting with the offense, but still not harmfull for health I guess.

Bottle (750 ml) shared at tasting. Gusher. Clear pale yellow with a medium white head leaving little lacing. Aroma is of lemongrass, mint, smokey notes, mild funk and mineral notes. Taste is minty and lemongrass forward with smokey notes, a rather strong herbal presence and mineral notes. Light to medium body. Off putting foamy carbonation that really kills the mouthfeel. Lemongrass finish. Usual Fantôme weird stuff that can be either a hit or a miss and this one fall into the latter category unfortunately. Not super bad, but the mouthfeel is poor.

pours cloudy light yellow with a frothy/creamy white head, reviving dangerously, abnormal lacing. funky minty herbs, lemongrass, burnt plastic, smoked lime juice, minerals. disturbingly foamy carbonation, light body - slightly watery; drying smoky-spicy-citrusy finish. a smoked lime-oriented saison.

Appearance:
Turbid golden/amber with a slight white head.

Taste/Palate:
Starts medium sweet with malts, caramel, honey, flowers and loads of fruit; ends slightly dry and spicy.

Bottle at James’ for cider and Big Alice night. Pours a hazed amber with a thin white head. Skunky on the nose, soft musk and a hint of citrus behind it. Medium bodied, tart with a touch of citrus, soft musk. Gentle musk into the finish, light and tangy. Very tasty.

Bottle. Pours a hazy orange color with a white head. The aroma is fresh and spicy with nutmeg, lemon balm, orange peel, herbs, Martini and grass. The flavor also has a lot of spices with fruits in the background. A little sour. Here’s hops, lime, lemonade and dry hay. Quite short aftertaste. Has a slick mouth feel, medium body and a light bitterness. A fresh, fruity, spicy and easy drinking ale. Very interesting and well balanced.

Big bottle at home. Cloudy golden, white creamy head. Spicy, citrus fruity, grassy hoppy, lightly tard and funky, nicely creamy malted. Fizzy carbonation, medium body, soft mouthfeel.

Bottle. Hazy gold with a big white head and lots of floaties. Truly bizarre aroma and taste. Sort of dominated by oregano, with some hints of mint, pencil lead and spelt. Light and spritzy. Wouldn’t drink it again but I’ll never forget it.
