4.3 AROMA 8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 5/5 OVERALL 17/20
750 into trusty Duvel glass. I must confess: I’ve neglected Fantome until now. I was exposed to Fantome in my beer geek infancy, and I wasn’t ready. Too funky, too weird. Now, I don’t think it’s weird at all, simply beautiful. Uncorked this one with a pop and was immediately assailed by the funk. A nose in the glass discovers snappy carbon dioxide released from the bubbles and yeasty acidity I associate with older, well-aged bottles of Orval. As it warms, dark twiggy things come out in the smell. Flavor and texture in this piece are perfectly married. Initially there’s a rush of limey acid, mouthwatering, riding the tickling carbonation. The middle stays juicy, but other things come to play too. It doesn’t get bogged down in cottony yeastiness like other wild brews, but rather the cardamom and light spiciness stays light and vibrant. The finish is long and lingering, and different waves of flavors drop in to visit: honeydew, lightly buttered bread, light sea salt. Awesome.

3.2 AROMA 6/10 APPEARANCE 4/5 TASTE 6/10 PALATE 3/5 OVERALL 13/20
From notes. Enjoyed at Doug’s house on July 04 for the first beer I’ve brewed with him! 750 mL bottle. The pour is a foggy lemon colored bright yellow with a thick white head that falls slowly, forming a dense cap and a couple legs of lace. The aroma is interesting. There is a ton of lemongrass, but there is a huge floral grassiness to this that is interesting. The spiciness on the back end really is a deterrent for me. The flavor is very similar. Maybe a little more fruitiness to it, but it’s just so damn spicy and grassy. The mouth feel is surprisingly thick and softly carbonated for a saison. There is a light banana that joins the bright lemongrass and floral spice on the back aftertaste. This is interesting, but I’d never had a Fantôme beer before. It wasn’t spoiled, so that’s a good start.

4 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 16/20
Pours a slightly hazy yellow golden color with white head and plenty of floaters sinking to the bottom. Light fruits, white wine notes, chardonnay and pinot grigio on the nose; follows onto the palate. Medium bodied. Finishes much like a white wine, just has that type of a flavor to it.

Pours amber to deep amber, hazy with amazing dense off white head. Aroma is off the charts, complex with cypress tree, lavender notes, beachgrass(!!) notes. Taste is salinity, caramel, amazing and complex, I’m overwhelmed. Can’t judge anymore, I’ll just enjoy :)

4.3 AROMA 8/10 APPEARANCE 5/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20
Free sample courtesy of the brewer Dany @ Fantome, Soy, Belgium. Rating from a 75cl bottle from Dany, enjoyed at home. Pours a lightly hazy amber, good creamy off-white head. Aroma is spice and saison yeast. Taste is beautifully spicy yet has a sweet, almost wine-like yeasty depth. Mouthfeel is a bit scuzzy, but its sweet spicy vinous character really resonates with me. And judging by the amount of empty spice jars in the Fantome brewshed, Dany doesn’t hold back on the spice

3.8 AROMA 8/10 APPEARANCE 3/5 TASTE 8/10 PALATE 4/5 OVERALL 15/20
Bottle courtesy of Maakun shared at de zuipschuit. Very funky, doughy, yoghurty, floral and herbal, flower. Light sweet, light bitter, very minerallike, light sour. Milky and minerallike texture, smooth and light carbonation though it was a huge gusher. Like!
