This is a flavorful, but mild beer that has great balance. The mouthfeel is medium and smooth. Frit, citrus and spice in the aroma, along with sweetbread, candied orange, coriander and clove. Overripe orange in flavor, bready yeasts, apricot, spicy herbal notes, floral as well and sourdough. Medium body and gently prickly carbonation. Nice. Krausen (102), USA Dec 29, 2007 Lot NoC, no date on bottle but I suspecit is is quite old. After all the reviews, I am not that impressed. Meaty, brothy yeast autolosyis dominates the profile with a black pepper spice dominating the palate. It is not an easy beer to drink. It tastes like dirty sweaty gym socks in my mouth. It is really disjointed, the flavors are not coming together. I would take a Omegang Hennapin or Bison Farmhouse Ale to this beer any day. oakbluff (298), Winnipeg, Manitoba, Canada Dec 22, 2007 Beautiful looking beer. Golden straw with good clarity and a three finger fluffy white head. Nose- musty tartness. Taste- pale malt with a twinge of dry tartness that is earthy, woody and quite spicy. Some lime is evident as well. Carbonation is spritzy but not biting on the tongue. This really drys out the mouth in a good sort of way. Drinkability is good, and its always a sad moment to see an empty bottle of Fantome.

The nose is hay, dough, spice, lactic acid, cheese and cotton candy. The flavor is lightly tart, lightly sweet with cotton candy, light lemon, orange, light herbs and hops. Nice dense head, pours with a lot of carbonation, as would be expected. Surprising how much sweet, maltiness comes through, equally surprising how well this combines with the esters from the yeast. Slight sour flavor and aroma, but definitnely nothing very pronounced. Very tasty. Slightly oxidized - a little bit of chalkiness in the finish, but that’s probably just because this thing sat on a container ship the last 6 months of its existence. Aroma of fruit and some malt. Flavor of sour apple with a hint of spiciness. Not as dry spicy as some saisons, but more of a subtle spiciness to complement the fruit and tartness. Excellent Beer!
