COMMERCIAL DESCRIPTION
This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

Golden yellow body with a nice two finger head in a Duvel tulip. Some nice lacing left as well. Aroma is full of lemon and orange, spice, wheat and bread, sourness, hay and horseblanket. Flavor is citric, white wine, wheat, tart with fruity sweetness and floral hops in the background. Nice carbonation and medium mouthfeel with a nice initial dryness. I’d prefer lower alcohol, but certainly tasty and unique.

750ml bottle. Pours an orange color with a huge white head. Aroma is Fantome all the way. Earthy, funky, bready citrus. Flavor is much the same, earthy, funky, bready, pepper, orange peel. Tart and funky finish. Great beer. A wonderful farmhouse ale.

Really interesting fruity and floral aroma. Very light grapes. Yeasty goodness. Pretty great appearance as well, nice one finger white head with great retention and excellent carbonation over a light gold liquid. Taste doesn’t quite live up to the scent, at least not in boldness. The floral and grapes are there, especially in the finish, but this is otherwise pretty subtle. Very refreshing, and spice is at an acceptable level. This goes down really easy. Mouth has an extremely dry finish over a thin and fizzy mouth, which is great for this style. It wouldn’t be drinkable otherwise.

I cant believe that I have never had this one considering that i love saisons. Poured a cloudy yellow color with not much head at all. Aroma was a very light funk and citrus notes. Flavor was actually pretty clean not as crazy as i expected. Very very easy to drink. No alcohol or harsh notes at all. This did not leave much carb on the tongue at all though. I would have like a better carbonation i think it would have opened it up a lot more. Not very funky as most have noted. Solid saison though.

Pours orange with a nice foamy one finger head. Sweet candy, lemon, brett, straw, and orange in the aroma. Flavor is tart, almost sour with lemon, leather, horseblanket, sour grapes, and candy sugar. A great saison.

750ml. bottle shared with Quevillon at Brouhaha. The color is a hazy honey with a thin beige head. The aroma and taste are of fruits mostly citrus. Also in the taste are malts of different kinds and also some hops that give it that bitter dry special taste.

750ml. somewhat of a newer bottle. Pours with a slight carbonation- nothing big- dull copper with a thin diminishing head. Aroma is real nice- typical fantome saison character and fantome brett infected funk- but slight- mostly just a unique saison kick- earthy, salty, bretty, leathery, light horse, some salty briney olives and mild cheese. Flavor is fantome bretty funk- some salt and a nice orange peel and some orange tic tac with a salty orange candy- maybe like a circus peanut hint with a slight tart very nice light drying finish. Relatively clean with some orange zest, and just easy drinking once you get used to it. Very unique.

UPDATED: MAR 20, 2010 Sampled. Poured a cloudy yellow/orange color. Aroma was really fruity with lots of citrus and some candy notes. Taste was more of the same with a nice flowery touch to it.
