Commercial Description:
This is a delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

Bottle poured into a Unbiroue tulip. Pours a light golden color with plenty of carbonated bubbles racing to the top of the glass. Smell is very fruity and wine like. Taste is very much the same with some sour/tartness coming through. It’s very nice. The mouthfeel is well carbonated and has the perfect amount of sourness to taste and not ruin the beer. This was a very nice surprise. It’s a very good beer that you’ll find leaving your glass all too quick. It’s definitely I will revisit again.

From a 750mL Bottle. Pours a transparent golden hay with a tall layer of creamy, brilliant white head. Herbal, slightly sour aroma with hints of camembert rind, juicy pear, chardonnay tannins, and dusty pepper spice. A nice bready dough malt base lays beneath with a hint of cardomom seed. Light to medium body with a sparkling, champagne-like carbonation. Starts out with a lightly tart, vinous brett character, and is closely followed by a well spiced, dry bread dough. Stalky herbal, goldenrod greens create a wild, gardeny hop character that linigers into the first phase of the final smack. The sour characters dry up the palate further, taking over from the hops, and adding a fantastic funky, musky, cheesy dimension to the finish. Dried thyme and crushed green peppercorns round out the flavor profile.

Bottle courtesy of Boboski: Poured d own a slightly hazy beige color ale with a nice foamy head with great retention and lacing. Aroma of funky yeast is dominating with some Belgian malt and some floral/fruity notes. Taste is also dominated by yeast with some sourness and brett like characteristics. There is also some sweet and floral note4s that provide much enjoyment as well as some light spices. Taste is quite complex but easily enjoyable with a full body and great carbonation.

Bottle. 750 ml. Orange/ golden colour with a white head. Aroma is yeast, sour, fruit, apple. Flavour is yeast, sour, fruit, apple, citrus, apple, spices. Nice beer.

750ml bottle, unknown date, pours clear straw color with fluffy white head. nose is loaded with hay, vinegar, lemon, and some sweetness in a soft caramel note. flavor notes are of spicy coriander balanced with a mild sweet honey and caramel notes, yeasty and crisp, and funk. alcohol is very well hidden. mouthfeel is very silky and long. this is really fun to drink, very easy, refreshing, and delicious. i still think i prefer my saisons crisp and dry over one’s like this that are mildly sweet, but still a great saison.

Bottled, 0.75ltr corked. Hazy, unclear, yellowgolden beer with a nice, dense, huge white head. The aroma is a bit sour, with lemon, cloves and weak notes of caramel. The sourness and citrus is found in the flavor as well, and is followed by wheat-notes, spices, yeast and coriander. Some nice medicine-notes as well. It has a medium body, the right fullness-level for this beer, and the finish has both medicine and citrusy bitterness. A complex beer that I would like to taste again. (070119)

750mL bottle. Translucent yellow-gold with a large rocky white head. Dusty dried flowers/herbs in the aroma with citrusy and spicy esters. Mild sweetness complements an emerging soft tartness. Floral and fruity yeast flavors, and a perfumey spice component. Drying finish with a lingering mustiness and sweet/tart interplay. Mouthfeel is a light medium, rather dry.

750 ml bottle. Pale and cloudy body with a nice, big, dense head. Aroma is acidulous in a “wild yeast” way. Flavor is surprisingly fresh, complex, spicy and has also a kind of balanced sweetness even if the sourish is dominating. I just love this.
