Texture is soft (very low carbonation) and taste is dominated by hoppy and herbal flavors. Leaves a good bitter/sour aftertaste. Flavor follows with nice fruity sweetness taste up front, nice lemon like bitterness in the body which carries into a dry white wine like finish. Alcohol is evident, but I don’t think that’s really ever a bad thing unless it’s too strong or throws off the balance of the beer. Palate is medium, bitter and dry, again like a glass of wine. Nose is sour, tart, fruity, and a mild nuttiness. Flavor is sour, wild yeast with a tart finish. Medium palate. Not easily recognizable as a Saison. Flavor is hoppier than expected, citrusy, lemony, spicy. But, the off-smell was gone quickly, and what was left was a really good beer. First time for me with the saison style- very much enjoyed this one. Flavors ’danced’ on my tongue- lots of fruit going on here without being too sweet. Would definately have again. Very musty flavor that overpowers in the beginning turning into a lemon spicy flavor by the end of the beer. Some alcohol present throughout. This is definitely a unique beer, but it doesn’t really catch me as something that I’ll be craving.
