COMMERCIAL DESCRIPTION
This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

750ml bottle from Whole Foods San Diego. My first Fantome was awesome! Tons of fruit and Belgian Yeast in the nose. Fairly acidic and sour on the finish, a great saison!!

BB date is worn off. Pours an opaque honey color and lots of sediment, very intriguing, and a moderately full, creamy, white head which settles quickly to a very thin, frothy layer and sporatic lace. Nose is interesting with pears, apricots, lemons, lots of musty yeast notes, light candi sugar, and hints at cinnamon. Flavor is highly citric with lemons and apricots, light pear notes, candi sugar notes almost giving a bubblegum note, light notes of wet grass, musty yeastnotes of basement, and a moderately low bitterness. Palate is medium, borderline fizzy, and quenching; the carbonation and quenching acidity really complement each other. Finishes fairly long with just a minimal bitterness to match musty notes, lemon acidity, faint wet grass, and lingering cinnamon. Certainly the most acidic and fruity saison I’ve tried with more carbonation than I usually like in any beer but the comination really creates a quenching beer. The fruit flavors were exceptional, but the hops seemed to lack some; nevertheless, a unique beer perfect for the summer.

Sampled at Bockyhorsey’s Bocky Bash on 7-5-08. Pours a cloudy gold color with a small white head and good lacing. Definate bubble gum aroma with yeast, fruit and wet straw. Flavor is very similar, with the yeast and fruit coming through at the end. Seriously good stuff!

Sampled at Bocky Bash on 7-5-08. Zesty citrus lemon and yeasty aroma. Murky yellow with white head. Got a zesty sour cirus flavor like the aroma with a hint of spice.

Bottle sampled at the 7/5/08 Bocky Bash locals tasting. Pours a murky yellow with white head. Nose is bubblegum, funky yeast and some sour citrus. Taste is Bazooka bubble gum, funk, cotton candy, yeast with a dry citrus finish. Medium mouth feel. Nice!

Pours a dark gold with a puffy white head. The aroma is sweet and citric with noticeable spice. The flavor is lighter than I’d expect and the alcohol is hidden very well. Very refreshing and an outstanding brew.

750ml. bottle. Can’t believe I have never rated this before. Hazy, dark golden color with a fluffy white head that left nice lacing. Nice funky aroma of wet grass, lots of lemon, black pepper and a hint of mint. Flavor starts off mildly sweet and musty, with some lemon, tropical fruits and freshly mowed grass before turning mildly bitter on the finish. Very nice.

750ml, cap and cork. I was excited to see this one on the shelf today. Hazy honey color with a fine white head. Funky and slightly sour/tart aroma. Bready notes are wonderfully balanced by the clean citrus (myer lemon, tangerine). Sweet tarts along with the light hops. Pithy citrus and slightly funky in flavor. Sour at the end, smooth and very sweet finish. Tiny bubbles. Tart citrus in the end. Honeyed malt. Marvelous beer - one of the best, if not the best, saison that I’ve had.
