Very still, opaque, dark, flat pear juice-like appearance topped by a low white head that lasts well. Looks thick and full. Somewhat tart orange, pear, apricot flavour. Very light barnyard character. Some hay and herbal hop character. Flour, pastry and doughy sweetness. Fairly full mouthfeel and high carbonation yet it feels pretty still in the mouth. Medium body. Bottle. Sampled with MartinT and Rastacouere. Resampled multiple times since original tasting and score bumped up from 3.3. Initially a small white ring which is a shame for fantôme and not much apparent carbonation. Aroma is a hay fest, barnyardy fantôme yeast complement a gentle fruitiness (peach, apple), but the flavors seem rather limited compared to other fantômes, not only in term of funkiness, but the malt profile, while soft, is not as earthy and complex. Mild wheat-like acidity, hay, apples, apricot, musty mustard grains and even something like mushrooms can be perceived in mouth. Lively carbonation (seriously a shame it produces no head) and medium bodied. A bit ordinary. / On tap at Spuyten Duyvil: Very different. Incredible opportunity. Highly fruity, barnyardy with big mango and bubblegum flavors, blue cheese notes, lychee, lime. Decadent scary cloudy appearance, yellow at the top, brownish at the bottom, dirty, shadowy. Cloudy amber color, a lot of yeast left in the bottle. Good carbonation. Nose is floral and spice. Starts as sour orange with yeasty overtones. Huge, creamy, cotton candy like head. Bubblegum sweet aroma with corriander, pepper, and some slightly citrus like notes. Sliky smooth on the palate. Loads of intresting flavors. I picked up on orange, pepper, light bready malt, and a cool exotic spice flavor that reminded me of good incense. Just tons of different flavors emerge as it warms. Dry, hoppy finish that turns slightly sour. Overall, a dry brew, but not acidic or astringent. The balance is what really got me; A perfect mix of spices and hops. bitter (1137), Henderson, Nevada, USA Jun 17, 2004 bottled: pours murky orange with a big tan head, lots of bubbles. slight musty nose and citrus. palate is fizzy and apricot, apple fruits. some bitter accents at the end. very dry. good refreshing and crisp. 8% cant believe it, not a hint of alcohol in this beer if you can call it that. reminds me of a light fruit lambic. interesting?
