This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

For me that beer represent another dimension of what beer can be. Lemongrass, grape, yeast... Much better than any cider or champagne, but close to them in many sences.

Bottle. Pale golden cloudy body with large white head. Aroma is very fruity with apricot and beaches also a hint of sourness. Taste is a little bit sweet with fruits, apricots again and some spices. Aftertaste is some bitterness some sweetness. Very nice one.

Bottle - doesn’t say saison on the bottle, but this is it. Clear gold with a large white head that fades a bit but lasts pretty well. Aroma of hay, earth, mace, apricots and their almondy stones. Quite lambic-like aroma, a bit more overt fruit. Sweet, fruit and red berries, slightly toasted grainy with an initial boozy kick, then funky, tart and woody notes, gentle bitterness and a dryish spiciness at the end. Orange blossoms there too. Beguiling, intriguing, rustic.

750ml bottle. Pours out golden bordering on amber with big chunks of white head. Hazy from the first pour to the last so clearly plenty of yeasty things going on. Musty, wild, classic farmhouse aroma. Taste is yeasty complexity and orchard fruitiness. Gives you plenty to ponder but never reveals all the answers, marrying that complexity with a straight up drinkability that is very refreshing.

Pours straw gold with fluffy white head that falls with nice lacing. Light barnyard hay aroma with wet grass and lemon leaf. Citrus leaf green grass but not bitter. Notes of vanilla and wood. Good carbonation and mouth feel. The beer leaves a soft and enjoyable finish.

Shared a 75cl with two friends. Pours hazy yellow with a white head. Smells of fresh grass, acid and kind of wine yeast. Taste is really refreshing. Low bitterness, medium carbonation, pretty dry. Tastes of apricots, citrus and peaches. Really good saison!!

750 ml bottle from old backlog notes 07. Pours a hazy dark golden orange color with a medium sized white head. The aroma and flavor have a musty funk, grass, light tart fruit, herbal character with some spices and a strange sweetness. As I look back on these notes I realized that I didn’t have enough experience to properly describe this beer at the time. Fantome beers are usually more difficult since it seems they just grab whatever twigs, grass, flowers, dirt they have close and brew a beer from it. Always interesting.

Has a hazy, orange yellow color, with a huge, fast disappearing head. Smells of lemon peel, mixed with soft Belgian yeast and joung carrots, overall pointing into herbal ,slightly spiced direction. Also contains hints of fermented sourness. Begins with soft yeast, which feels incredibly smooth on the palate, then spicy, syrupy sweetness with hints of overripe sourness turn visible. Slick sourness remains in the throat and on the palate, while hot spices add a decent complexity. Medium bodied, begins with a very smooth impression, then turns hotter with stinging spices and overripe sourness. Driven by lively carbonation, finishing slightly bitter, with peppery spices still being detectable.
