This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

Notes dated 07-02-2010: The pour yields the typical huge rocky white saison head atop the golden straw colored body. A little yeast kicks up on the final pours and muddies it up a bit but not in a bad way. The smell is of Meyer lemon, peaches, and the requisite barn yard funk. It might be the best aroma I’ve ever noted on a saison. Taste is under-ripe strawberry, tart citrus, and farm goodness. This saison finally made me realize why it is also called a "farmhouse". It’s as if every nuance of the farm community this was made on some how made it into the nectar that is Fantome. I am convinced that they don’t come any better than this so the ultimate score is due.

Orange color, cloudy. Aroma has dairy cheese and framboise with hops shining trough. A bit of sweetness in the flavor, but overruled by a sour creme sourness. Goats cheese! There are hops present, but on the background. Citrus. Very interesting beer, probably hasn’t the flavor that it ought to have, but I really liked it.

Tap. No head. Hazy burnt orange rust. Sweet passion fruit and some sourness in the aroma as well, almost a candy note. Some nail polish thatbreallypissesmeoff. Flavor is strawberry, acetone, touch of seer earth. Meh. Medium droopy body. Bad batch?!

Importerad från Brewdog Skottland. Tjock, orangefärgade med lätt smutsvit skumkrona. Kraftig doft av lätt förmultade äpplen och vinäger. Sötsyrlig kropp. Smak av vitvinsvinäger, äppelkart, tart, apelsinzest, äppelmos och citrus.

Pullo @ The Bottle Shop, Brugge. Kaatuu tulppaaniin oranssinkultaisena ja sameahkona, noin 2,5 sormen paksuisen vaahdon suojaamana. Tuoksussa on raikkaan happamaa sitruunaisuutta, makeampaa hedelmää, vahvasti pippurista mausteisuutta ja hiven karviaismaista marjaisuutta. Maku on iskevän happaman sitruunainen ja yrttinen, vähemmän pippuruisuutta ja karviaista, joka yhtyy sitruunaisuuteen. Suutuntuma on hyvin hapan (saisoniksi), kuiva ja melko hiilihappoinen. Monipuolinen ja yllättävänkin hapan saison, todella paljon yhdessä paketissa. Hivenen raskas saisoniksi, mutta sopii paremmin syksyyn.

Shared bottle. Murky orangish-brown with virtually no head. Aroma of fruit, citrus, yeast, alcohol. Taste is citrus, white wine, alcohol, spice, and yeast. Good.

Pours a lovely thick hazy straw yellow, with light ambers and golds galore.
Even on draft it had a wonderful complex smell. Very grassy, wet straw and dirt, with some sharper herbalesque hops and grainy barley. Medium amount of funky old yeast smell which after warming smelled more thick and sweaty.
Flavor is powerful, tart, complex, dry and spritzy with a strong yeasty/doughy texture but still pleasant enough for a casual drink. Lightly spicey, flavorful herbs, like a wonderful old gueueze but a bit more hoppy and finishing less tart. Some lemon zest on the finish, but doughiness and cobweb flavors persist. Very good, perhaps a bit loose on the overall mouthfeel. 9/5/8/5/18

I’d been trying to track this down, since the classic from Fantome is near-impossible to find in Massachusetts any more. It’s basically just the seasons, Bris-bonbon and Pissenlit. I feared this had fallen off in recent years, based on every Fantome I’ve had in the past 3 years being mediocre at best.
Sadly, my fears were true and this was a mess of specialty malt, weird vegetal flavors and maybe some metallic notes, as well. Spoiled fruit delivers the death-blow and this is just barely drinkable, especially disappointing given how amazing some bottles of this were back in the 2004-2007 era. I think some batches stand out as some of the best brett/mixed-ferm/truly rustic saisons I’ve ever had.
Sadly, consistency is a big thing in brewing, and Dany seems never to have strived for it, much less attained it. While everyone’s entitled to their lulls and off years (see Dupont), I just don’t have any confidence in this ever regaining its former, rather fleeting glory. Rating is for this most recent batch.

Surprised I never rated this. Bottle at Hiranoya. Strawberry, jam, yoghurt, bit of vomit/Parmesan. Lemon and basil. Great stuff. Bitterness. It’s got the lot.

ASPETTO: ambrato molto torbido, schiuma bianca, grossolana, poca e poco persistente. AROMA: acido, speziato, leggero fruttato. Intenso e che stimola l’appetito. GUSTO: lieve acidità, frutta gialla, tanto speziato, erbaceo, vinoso, leggerissimo maltato. Retrogusto di scorza di pane e un po’ amarognolo. Corpo medio/leggero, carbonizzazione bassa. Pulisce benissimo la bocca
