COMMERCIAL DESCRIPTION
This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

UPDATED: AUG 24, 2012 Pours a cloudy orange with a nice fluffy head. The nose is fruity floral funky. Very interesting. The pallet is floral, slightly fruity with a bit of bitterness in the middle followed by a bit of funk and a little off dry sweetness. ---Rated via Beer Buddy for iPhone

750 ml bottle from old backlog notes 07. Pours a hazy dark golden orange color with a medium sized white head. The aroma and flavor have a musty funk, grass, light tart fruit, herbal character with some spices and a strange sweetness. As I look back on these notes I realized that I didn’t have enough experience to properly describe this beer at the time. Fantome beers are usually more difficult since it seems they just grab whatever twigs, grass, flowers, dirt they have close and brew a beer from it. Always interesting.

Has a hazy, orange yellow color, with a huge, fast disappearing head. Smells of lemon peel, mixed with soft Belgian yeast and joung carrots, overall pointing into herbal ,slightly spiced direction. Also contains hints of fermented sourness. Begins with soft yeast, which feels incredibly smooth on the palate, then spicy, syrupy sweetness with hints of overripe sourness turn visible. Slick sourness remains in the throat and on the palate, while hot spices add a decent complexity. Medium bodied, begins with a very smooth impression, then turns hotter with stinging spices and overripe sourness. Driven by lively carbonation, finishing slightly bitter, with peppery spices still being detectable.

Bottle at Cafe Sara, june 27th 2014. Hazy orange body with a big white head, lively carbonation. Spicy yeast aroma of clove, pepper, with moderate citrus hops, grass, and a touch of apples. Light funky and medium spicy taste, fruity, good yeast character. Pleasant refreshing bitterness and a dry finish. A very well crafted saison.

Flaska från Belgoklubben. Halmgul och kraftigt grumlig vätska. Viskositeten är nästan trögflytande. Ananasdoft och peppar. Smaken alldeles för tunb. Torr munkänsla med pepprigt avslut.

Bottle @ home 20140619. Pours slimy, cloudy and golden. So ropy and slimy the CO2 barely reaches the surface. Aroma is delicious with dough, citrus, banana, spices and pepper, a little barnyard. Just awesome aroma. Taste is of course a great disappointment, you get a hint of the delicious components from the aroma but they barely get through the nasty slime. Poured it down the drain unfortunately. Have another bottle, will save it for a year or two and see if it goes away.

Bottle at BottleDog, King’s Cross’ first tasting on 12 Jun. Poured a hazy golden, with a massive white head. Aroma of bananas, cloves and cereal. Chewy grain flavours, with some wheat and grassy hop bitterness. Finish was straw, yeast esters and marmalade.

750ml bottle shared thanks to Lukaduke! Pours hazy toasted orange. Nose is rustic earthy grain, spicy yeast, toasted bread, soft citrus. Taste is similar with nice fruity yeast notes, orange, citrus, rustic wheat. Finish is dry earthy wheat, grain, spice.

Bottle thanks to Niels ! Pours a slightly hazy medium golden color with two fingers of white fizz. Lots of grassy herbal complexity on the nose with nice doughy malt backbone. Palate opens up with some rustic earth and nuanced herbalness that rolls into a unripe pineapple, stonefruit pit, lemon rind and floral grass. Really layered and complex yet refreshing and chuggable all at the same time ! Love to have this on the shelf in Maine !
