COMMERCIAL DESCRIPTION
This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

750mL Champagne bottle with obligatory cork in it. BB end of 2019 Pours a hazy, somewhat murky orange-gold body. Holds a dense, well-packed white head throughout. Aroma subdued at first, opens as you go - orange rind & skin, touch of mandarin, almost kumquat-like I guess, with savoury white pepper spices, clove & nutmeg, subtle Lambic-like cheesy, hay-like funk in the works. Lovely mouthcoating texture, the abv certainly contributes its share of weight, perhaps not as lively with carbonation as many Saisons are but has a lovely fine spritz about it. From the get go, it tastes amazing - zest, zest, zest & citrus in abundance - juicy mandarins, orange pitch, grapefruit rind, even some glacé sort of peel in there, some apricot too, touch of grainy sort of malt leading to spicy phenolic notes of pepper, and clove, and dried herbs, freshly cut hay. Has a mild acidic kick on the finish, restrained bitterness; it’s a very smooth ride overall - that booze goes through without a word. Could well be the best Saison I’ve had to date - brilliant!

750 ml purchased at Hill Farmstead. Orange color, slow steady head. The aroma Aromas of melon pulp, clove, honey, yeast.

Taste is similar to the aroma, sweet honey, old fruit with a hint of tart finish. Light to medium bodied with high carbonation. Overall, yeasty, fruit and mild tartness. Pretty good, I think I liked the aroma more then the actual flavor.

(750ml bottle from boxbeers.dk shared) Pours a completely opaque pale amber colour with a massive pile of dense off-white foam that has impressive staying power and lots of lace. Aroma is semi-sweet, semi-tart, quite fruity and rather spicy. Notes of citrus, stone fruit, sweet white grape, estery, floral hops, hay, peppery phenolics, and slightly funky earthy yeast. Flavour has a somewhat sweet fruity core with some malt backbone, dried citrus, nectarine, estery, a little earth, floral hops with some hay, moderate peppery phenolics building towards the finish. A little acidity in the back end but just a hint tart, semi-dry with low grassy/spicy bitterness and some light breadiness from the yeast. Medium bodied with effervescent mouth-filling carbonation. No hint of alcohol. A somewhat unique saison with lots of yeast character, solid and quite drinkable.

Dark muddled copper, darker than expected. Nose is lightly fruity belgian yeast esters. Taste is off dry with fruity and spicy yeast elements. Great balance and less funk than I expected. Just a really nice saison that belies it’s 8% and is restrained on the belgian fruit/spice elements just enough.

750ml bottle. Orangey golden colour, white foam head leaving some lacing and floral fruity aroma with apricot and funky yeast. Taste is grains, bread, tart and fruity, apricot, citrus rind, straw, earthy, barnyard, with some grassy bitterness. Foamy mouthfeel, light to medium bodied, spritzy carbonation, dry tangy bitter finish. Nicely drinkable.
