Cloudy yellow colour. Lemon and apples with noticeable wheat character and a slightly sour edge. I also thought I detected some gueuze-like accents in the aroma. Interesting. Bottled at GBBF 2004.

Bottle. 750 ml. Orange/ golden colour with a white head. Aroma is yeast, sour, fruit, apple. Flavour is yeast, sour, fruit, apple, citrus, apple, spices. Nice beer.

UPDATED: MAR 14, 2009 Bottle picked up at Deciccos. Deep golden beer with a thick white head. Aroma is amazing. Very bright sweet fruity nose. Passionfruit, mango, papaya and orange citrus. There is a kiss of tangerine and sweet pale malts. There is a light backnote of tropical lime aroma. Flavour is sweet and chewy with a lot of citrusy/yeasty complexity. Bright citrus flavour, fresh light yeastiness and an incredible lightness. Punchy acidic tartness. A lot of bright pineapple and tropical acidity. Chewy and light and incredibly tasty. Loads of acidity but with a very impressive tropical complexity. Man, this stuff is incredible. Loads of lingering tartness.
Tap at d.b.a. Ugly 10oz pour… looks like a banana milkshake with a thick foamy white head. Very fruity nose, strawberry, cherry and raspberry. A bit of wheaty spiciness as well. The flavour is very fruity and quite yeasty. Bready/doughy yeastiness. A touch of soft apice and then more sweet fruity berries. The texture is thick and milky and I can’t help but think this isn’t quite right. Still the light tartness combined with wheaty acidity makes for a great counterpoint to the sweet fruit and light spice that the yeast contributes. Soft palate with a light tapioca-like flavour. A good tasting, if terrible-looking pint. I’ll need to try this again when it’s in better shape.

Pours a cloudy copper orange with a thick puffy white head. Aroma is rich and bready with a nice Belgian farmhouse yeast character. Body is caramely sweet with a bold dry hoppiness and good balance. Finishes mildly spiced, bitter and dry. A flavorful and complex saison.

UPDATED: FEB 9, 2005 (BSF 2003 version) Funky orange, "lijmend" (viscosus bact.), virtually no head. Lactic infection, cerials... like cornflakes-with-milk. Citrus and lactic acids in the taste. various spices, including very unusual ones. Fattic acids. Lactic components fill up the beer. 8% is much for a Saison - but they’re here. Not Dany’s best try. Problems with the yeast?

Pale peach-yellow, huge, dense yellowish head. Very fresh spicey nose: laurel, thyme, bit soapy & piney. Sharp taste, ambrée malt, spices and (unripe) arichide (peanut). Flavour as the fibrous peel of peanuts and some mild-bitter anonymous herb. Warming up the arachide flavour becomes more haylike, grassy. Sharp, burning sensation. Medium bodied. Even this fresh bottle tastes weird to me. Not MY regular Fantôme. 8/10 Aroma, 4/5 Appearance, 6/10 Flavour, 3/5 ^Palate, 14/20 overall.

Bottled - GBBF 2004. My last beer of the festival and an expensive treat. A hazy yellow/gold colour with a big aroma of vanilla, spices and cream. The taste is nicely spicy with wheat pears lemon and smokiness all present. A tasty complex beer.

Pours with a thick white head covering a hazy yellow body shimmering with small particles. Really strong lacing. Aroma is amazingly fruity with strong notes of strawberry (a first in a beer for me), madirin oranges and black pepper. Lightly fruity, and agains trawberry taste that ends yeast and peppery. Lively bubbles.

UPDATED: AUG 16, 2008 Light and soft cloudy yellow body under a floffy white head, perfect appearance. Sweet, spicey citrus aroma, floral as well, heavenly yeast spice and fresh cut oranges... medium to full body, lots of fruity orange, mango and peach flavors, compliments the dryness well... just a wonderful experience.
