Commercial Description:
This is a delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

Pours a hazy gold color with a thin head. Intense citrus aroma with a fair dash of sourness. Very sour apple taste. This struck me as more of a gueze than a saison. Definitely not representative of the style, but tasty all the same.

750ml. somewhat of a newer bottle. Pours with a slight carbonation- nothing big- dull copper with a thin diminishing head. Aroma is real nice- typical fantome saison character and fantome brett infected funk- but slight- mostly just a unique saison kick- earthy, salty, bretty, leathery, light horse, some salty briney olives and mild cheese. Flavor is fantome bretty funk- some salt and a nice orange peel and some orange tic tac with a salty orange candy- maybe like a circus peanut hint with a slight tart very nice light drying finish. Relatively clean with some orange zest, and just easy drinking once you get used to it. Very unique.

On tap @ Sunset Grill March 2004. Pours a lovely thick hazy straw yellow, with light ambers and golds galore. Even on draft it had a wonderful complex smell. Very grassy, wet straw and dirt, with some sharper herbalesque hops and grainy barley. Medium amount of funky old yeast smell which after warming smelled more thick and sweaty. Flavor is powerful, tart, complex, dry and spritzy with a strong yeasty/doughy texture but still pleasant enough for a casual drink. Lightly spicey, flavorful herbs, like a wonderful old gueueze but a bit more hoppy and finishing less tart. Some lemon zest on the finish, but doughiness and cobweb flavors persist. Very good, perhaps a bit loose on the overall mouthfeel.

Chalky sweet aroma - US smarties or EU refreshers. Orange, small head. Massively crisp citrus taste. Finish is rubbery. Aroma develops toffee as it warms, or even fudge, vanilla fudge at that. Carbonation was crisp. Taste definitely combines both crisp citrussy elements and sweet toffeeness - very nice. There are even some honey retronasals a few times. Slightly acidic, and very nice. And I need to say fudge at lease once more.

Bottle at Delirium, Brussels, Belgium, 26-07-08 Hazy gold pouring beer with white head. Rusic notes on the aroma a sour edge some potato peelings in mouth along with some caperberries at times. Surprisingly dry and also with a touch of sweetness, nice beer indeed.

(750ml bottle) Pours a foamy, white head and a sediment-filled, highly-carbonated golden body. The head sits atop the nectar like a lofty cloud. Nose is lemony, yeasty, rotten apple, coriander and cilantro. Lovely and crazy flavours of a tart pear, white wine, yeast and pepper. Incredibly dry finish. Very good!

Bottle. Hazy golden colour with a huge mostly lasting white creamy head. Heavy aroma and taste of hops, fruits and citrus. Well balanced.

Pours acloudy yellow with a long lasting white head. Sour almost lemony aroma with a hint of spicieness. Nice clean refreshing mouthfeel. Acidic lemony flavors hit you first, followed by a light spicieness and some pepper. Nice crisp finish leaves you wanting more.
