Commercial Description:
This is a delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

Slightly hazy straw colored with a small white head. Sour barnyardy aroma: hay, straw, yeast, Granny Smith apples, and flower petals. Flavor is of a slowly increasing sourness, yet with a sweet fruit/honey undertone. Light, slightly stale and sour finish. I feel like going out and working in the fields after drinking this, it is so earthy and "farm-y."

Cloudy straw color. Nice fruity aroma of raspberries and cherries. Slightly malty flavor. Some fruitiness. Slightly medicinal. Noticable bitterness in the finish. Quite refreshing. The bitterness is slightly odd--it tastes a bit like crushing grape seeds in your teeth.

Aroma of citrus, grass, spice and perhaps other fruits. Hazy light orange gold color with a decent white head that tried to stay. Medium body with sharpish carbonation. Flavor is yeast, orange oil, light stone fruits (apricot, peach?), slightly acetic, lightly woody. Finish is quite dry. It is freshly fruity in a sour way. Very nice drink.

Bottle. Amber beer with a whitish head. Yeasty, orange/lemon aroma with spice and honey. Orange honey spice flavor with good malt backing. Light and sublle but very well balanced. Great beer. Lighter carbonation than expected.

Poured a deep yellow with thin white head. Had a moderate skunky aroma which seemed to disappear as it breathed. Has a fruity flavor with banana, apples, and peaches present. Quite nice.

750ml Bottle: Aroma is sweet. Smells of fruit, spices, citrus, and some herbs. Poured dark yellow/straw in color with a large, creamy, white head that lasted throughout. Very sparkling. Cloudy. Full of medium-sized particles. Good lacing. Flavor is lightly sweet and lightly bitter. Tastes of fruit, spices, pear, peach, syrup from canned fruit salad, and a bit of hops. Medium body. Chalky texture. Lively carbonation. Dry, fruity finish.

Bottle Conditioned. Nice pop when the cork comes out. I opened this up for a nice meal Chrissie was cooking - but we had a disagreement during the cooking, and she refused to have any with me. So I only had one glass. I put the rest in the fridge and had some for breakfast, and the rest, now, for lunch. It's a versatile beer because it can be served at different times. Light and fruity with a wheat beer spicy bite to it. I like the gentle effervescence when fresh. I found this a highly pleasant drink. Very satisfying, warming, flavoursome, refreshing and rewarding. It's expensive, but takes the place of a good white wine. I would say to reach the equivilant in character, quality and flavour of this beer in a white wine, you'd pay considerably more. Nice one!

Had this at Le Bier Circus on 5-26-03. Nice amber with a rocky, creamy white head. Some tartness, citrus fruits, and yeast in the nose. The body is full of spice and lemon mixed with some "earthiness". I will echo some other raters and this is defnitely champagne-like. Finishes slightly dry with some tartness and spice. I don't really have the tongue to pick everything out that's going on here, but this is still a damn good beer.
