COMMERCIAL DESCRIPTION
This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

It’s been a bit since I had this beer, but the thing that struck me most was a slightly pepper quality about the palate. Not peppery in a hop way, or even as an assertive note, but a kind of very subtle echo I sensed on the edges of my tongue. The saison wasn’t the best I’d tried, but that was a wholly unique quality for me to find in a beer. Fortunately, it was at a tasting and I was able to learn what it was. Care to guess? Of course--pepper. Quite an eye-opener.

Bottle. Cloudy but vibrant orange colour with a large, foamy white head. The aroma has notes of lacto, fruitiness with apple, pineapple, apricots. The flavour is sweet initially with citrus, apple, and becomes more acidic with some peppery notes. Superb.

Corked 75 cl bottle @ home. Pours hazy golden with a lot of sediment and a white head that leaves a little lacing. Aroma and flavour are lemons, spices, and yeast - with a slightly dry finish.

The thickest body I’ve ever tasted in a beer, smoothie-like. Milky yellow with strange white head. The taste is rather nice, dry, bitter, hay, lemon.

Bottle at Nüetnigenough, june 19th. Pours hazy yellow with a large white head. Aroma is light funk, peach, citrus, hay, earth, spices. Taste is medium sweet malty, light dry spices, light bitter. Smooth, medium bodied.

This beer is full of great and surprising tastes and aroma’s (mostly fruity, hay-ish), which make it a special beer, but also kind of heavy and un-easy to drink. It is probably great if you like this kind of beer, but this is not my think (happy I tried it though).

The regular from this fascinating brewery since 1988, a kind of strong saison, bit out of place since it is brewed in the Ardennes instead of Hainaut. Creamy, yellowish white, not too stable head, peach blonde colour, clear at first but turning hazy when more is added from the bottle and completely clouded after adding the final drops. Very fruity aroma, melon, orange, peach, apple, straw, leafy hops, earthy and yeasty, old cheese, tea, sherry, biscuit, ginger, vanilla, whisky. Finely sweet onset with fresh fruitiness and citrus touch, becoming more spicy, lightly sourish, peppery and yeasty, ending in a long herbal hop bitterness with some ’jenever’-like, undisturbing alcohol. Difficult product to rate since each batch tends to differ a bit, a typical feature of Fantôme... So something to repeat every now and then, a tough job but it has to be done.

Bottle. Pours very hazy orange with a huge frothy head. Nose has bubblegum, lemon, lime, light yeast and some banana. Taste has lemonpeel, bubblegum, lots of overripe fruit. Fairly heavy on the sweetness but refreshing at the same time with lots of notes of lemon and lime. Loved this one!

For me that beer represent another dimension of what beer can be. Lemongrass, grape, yeast... Much better than any cider or champagne, but close to them in many sences.
