The beer pours into my Bruery tulip with a frothy, pale, off-white colored head. The beer is an amber color that shows a lightly hazed, orange tinged, faint amber hued color when held up to the light. The aroma has quite a bit of fruit to it, lots of cantaloupe, star-fruit, some sort of musky tropical fruit, some floral grassy notes, lots of flower nectar character that isn’t quite concentrated enough to be called honey. I like that there is a touch of tartness to this brew, it helps balance the fruit character and the soft, pale cracker like and straw like malt character.
This is lightly carbonated, but still quite prickly, a light tartness also seems to accentuate this character. There is an herbal, slightly bitter, dried weed like character to the finish that helps to balance the up-front fruit and tartness. The bitterness actually lingers in the long finish with a quite a bite. Melon and green tropical fruit notes (sort of star fruit, green but floral guava, and a slight lemon like character. Musty notes intermingle with lightly oxidized, dusty pale malt, and there is quite a bit of earthy, herbal character, a touch of white pepper notes, and even some musty woodiness.
This is starting to oxidize a bit, but still shows remarkable similarity to the 14! And 15! that I had recently; remarkable b/c these all have a consistent character. Another fantastically tasty beer from Fantôme. I wish I had more of these Santés to try.

Pours a peach orange with a medium head and a really loud, fizzy body. Nose is an interesting tapestry of citric acid, bleu cheese, herbal grassy notes, and something darker and more savory, almost red meat-like. Mouth is all kinds of funky sock upfront, segueing into an oxidized caramel malt character that I detest in aged beers. It’s not their fault, it’s just that it hasn’t aged all that well. Lots of stone fruit, field flowers, and a weird savory note that reminds me of crumbled bleu cheese over a rare steak. Maybe this would have been really good before the oxidation blew it up.

Sampled at GonzoIllini’s Birthday Party (Western Springs, IL). Happy Birthday, Tony! Pours a richer bright yellow glowing body. Touch of haze, mellow bubbly carbonation with frothy whitish ring, laces small. Aromas are paper and straw, gentle apple, bread, and gentle growing herbal spice. Initial is gentle spice, apples, bland sweetness, touch of cobweb and some paper, wet paper, some spice. Odd. Middle shows some bland sweetness, moving quickly to dryness, some paper, spice, lingering lightly toasted apple. Certainly an odd beer.

Bottle, 2008. Nose of apricot, sweet orange, honey, bread, dough, lemon. Big and complex. Flavor is doughy lemonade, very bready. No hops, but the mandarin peel comes through like American dry hopping in a well aged saison. Great lemon. Fully, oily, silky body with soft fine carbonation. Very fun and original. Some ginger and pepper too. Weird and great.

Bomber. 2008 vintage. Thanks to mike12da. Chopped weeds, pencil lead, and lemon pie aromas. Cloudy orangeish-yellow. Lemon dominates the initial; candi sugar sweetness emerges in mid palate; then smooth mild lemon; subtle bitter finish. Very smooth. Such a complex aroma. Has aged very well. Great.

Bottle: Poured a hazy cloudy dirty dark blonde color ale with a large foamy head with good retention and some light lacing. Aroma consists of lemony notes with some rustic malt and light funky yeast ester. Taste is a nice mix between some lemony malt with some rustic malt notes and some funky ester. I really enjoyed the lemony notes which were really not tart at all. Body was full with good carbonation and no apparent alcohol. Probably one of the best Sante beers I’ve tried from Fantome.

In short: A sharp lemony farmhouse blonde ale. For those who like improvised crafbeers
How: Bottle 750ml, cork & cap. Consumed approximately 16 months after the first rating but certainly older than that. I usually thank my the person who provided me with the bottle, but in this case of this bottle the person doesn’t read ratebeer and I banged her a few hours ago, that counts as a thank
The look: Cloudy dark yellow body topped by a small white head
In long: Nose is mandarins, parmesan cheese (butyric acid), lemon juice, apple skin, farmhouse, other stuff, this is a Fantôme. Taste is young apples, white peppermint, acidic oranges, cobweb, freshly squeezed lemon juice, coriander, mandarines. Body is a bit thin and lacks that doughy cheesy yeast character of many other Fantômes. This is a beer for those who like improvised approximate farmhouse craftbeer (a description that applies to most Fantômes). This It undoubtedly shares many of the elements of the Santé-15 and just like Santé-15 it is very good, just not Fantôme excellent. Another very good Fantôme shipped to my in-laws and brought back by my wife when she comes back from visiting her family in Europe. That saves me a lot of money on shipping, I love my wife, and if I ever become a multi-millionaire I will love my wife just as much and I will probably miss not seeing her anymore.
