(Bottle) milkshake gold pour, wispy off-white bubbles. Nose of celery, earth, weird spice. Taste of cinnamon, alcohol, light Belgian yeast, celery and white wine. Well carbonated, but not a great Fantome for me.

Bottle from Etre Gourmet webshop. Pours light cloudy golden with a small white head. Aroma is herbal, light funky. Taste is fruity, with a distinct oaky woody bitterness at the end. Dry with lots of brett.

A steady pour into my large Tripel Karmeliet tulip produces a three finger thick, pale, off-white colored head. The beer is a dark gold, pale amber color that shows an almost clear, bright, yellow-gold hue. The aroma has a really interesting character to it; it is sort of a grassy fruitiness that reminds me of guava, strawberry, and some sort of musky, pine like tropical fruit note that is quite bright. Underneath this there is a dried hay and pale cracker like maltiness. The aroma is just really interesting, it is sort of like some really interesting, super-fruity, musky, new world hop variety; it really makes me wonder what spices were added here.

There is a hint of fruity sweetness up front that is quickly wiped clean by a light tartness and an amply dry beer. The finish has a sort of minty, musky, tropical fruit like flavor. There is a dried hay like grain character here towards the finish that merges into the funky hop and spice character. There is a touch of astringency and bitterness in the finish as well. This beer finishes quite light, it does have some palate heft to it up front, but only just, as this is a highly quaffable beer all around. The beer is dominated by this interesting tropical fruit / pine / musky / light tart character that just works quite well. The fruit flavors towards strawberry, guava, star fruit, grassy kiwi.

What interesting notes that the spices add to this beer; in combination with the standard hops, it really makes it taste like it has been hopped by some exotic, musky, tropical fruit laden, and herbal New World hop character. This is quite good, as much for its interesting flavors / aromas as for how good it actually tastes and smells. This achieves a great balance, is quite light without being watery, and is a fantastic example of a Saison. I can’t help but be incredibly curious as to what the spices were that were used in this beer.
