A soft pour into my Bruery tulip produces a four-finger thick, pale tan tinged head that rises more than a finger above the rim of my glass. The beer is a light amber color that shows a brilliantly clear, pale amber tinged, bright, yellow gold hue when held up to the light. The aroma smells of fruity cotton candy, ripe melon notes, soft black pepper, lots of tropical fruit, ripe kumquat zest, a fair amount of musty, slightly dusty yeast character, hints of cedar, and spruce tips. Dusty pale malt notes lean more towards defined, cracker like grain, and touches of straw as the beer warms up.

Drier than the sweet aroma would suggest, this has lots of woody, and tropical fruit laden hoppiness to it; the lingering finish has a slightly astringent, hoppy, bitter bite to it. Flavors of tangelo zest, lychee, kumquat and then notes of woody pine, touches of menthol, and orange infused cedar are all contributed by the hops. Soft, supporting malt notes of pale-grain crackers, and a rounded bread like middle mixes with a touch of cotton candy, and a soft sweetness that goes a long way towards accentuating the fruit character from the hops. Touches of phenolic yeast character accentuates the biting hop bitterness in the finish, provides a peppery note here, and other fermentation notes provide some alcohol warmth, clove notes that grow as the beer warms up, and some other, slightly tongue numbing phenolics.

All of these seemed to have been nicely hopped when young, and this is definitely the freshest of the Santé beers that I have had. Really nice, I am really digging this hoppy focus from Fantôme, I hope the series continues in a similar vein.

Bottle from Etre Gourmet. Pours light cloudy weak golden with a huge frothy white head. Slow gusher, even after the first glass. Aroma is sweet and spicy hoppy, bready malts. Taste is moderate sweet malty, fresh and crisp hops driven by a high carbonation level, almost fizzy mouthfeel, dries up towards the end, spicy and herbal bitterness finishes this one, great beer.
