33 cl bottle received in a trade. Opened up at Fantomefest 2014. Lighter in color than the previous bottles we’ve opened so far. Hazy yellow in color with a wisp of foam. Nose is sweet and oxidized. Flavor is honey, faint tartness, cardboard, and it finishes bitter. The body is lighter than the previous beers as well but carbonation remains about the same as most. Another Sante I think has seen better days. We wondered how the size of the bottle had affected the amount of oxidation the beer had.

A soft pour into my New Belgium globe glass produces only a wispy, thin, ring of a head. The beer made only a slight hiss upon opening, and is only lightly carbonated. The beer is a bright amber color that shows a brilliantly clear, copper hue when held up to the light. The aroma has a fruity tartness to it that is close to strawberries, perhaps a touch of kiwi-fruit, and a bit like apple-cider vinager; there does seem to be an acetic edge to the aroma. Some spicy, warming alcohol in the finish adds a bit to the nose, and there is also a hint of oxidized / aged, toasted malt to the aroma that has taken on caramel like notes with age. As the beer warms up the oxidized malt character becomes more expressive, though it does not become overwhelming.

Slightly sweet, definitely with quite a bit of fruit esters (ripe red plums, apple, and perhaps a touch of berry like notes), the beer also has an oxidation character that accentuates the apple cider notes, as well as contributing a hint of moist cardboard, and some stale brown cracker notes. There is a hint of herbal character here, perhaps a touch grassy, not quite lemon like, and there is a rounded earthy spiciness to the finish that provides a touch of bit. The beer is lightly tart, nothing like the nose suggested though, but it does accentuate the fruit notes here; it is too light to say what kind of acidity it might be though. The body is light and quaffable, yet still has a light viscosity to it that is brought out that much more by the very light carbonation.

Still quite drinkable, though with the smaller format bottle, and the greater age, this is a Santé that is on its way downhill. Still enjoyable though, and I am quite happy to be sipping this right now.

Big thanks to Scott on this bottle! Pours a clear gold with a slight amber hue and a white head that starts and remains at the edges. Aroma has a good amount of light spice, sweet grass and a hint of tartness. Flavor has earthy and sweet grains with a bit of light spice and a tartness that comes out in the finish.

In short: A old beer that morphed into a dirty terroir beer
How: Bottle 330ml. Shameless rating of a beer that shouldn’t be rated, I mean how old is this shit? I don’t care it’s a Fantome and I’m rating it. Bottle received a few weeks ago from grownfool, thanks a lot Brian. God knows where that beer has been trough over the years
The look: Murky muddy body mixing peach color and light brown topped by a medium beige head with medium retention
In long: Nose is dirty, old rustic yeast going the leather way, ionized water, stuff. Taste is muddy yeast, rustic stuff, moldy wood, soured light-color ripe fruits, refried beans, ionized water. Ok so my description seems to describe an awful beer, but somehow with this one every thing came together for a surprising cohesiveness to create some kind ‘terroir’ beer, and honestly I kind of like this old thing. Far from a clean and crisp beer, but enjoyable if you like the concept of a ‘terroir’ beer. Surprisingly drinkable, hard to say what it tasted like when fresh. It was a fun tick to drink this old beer, and thankfully drinking pas due-date alcohol is absolutely safe, at least that’s what Garry said, the giant blue talking squirel who walked by when I was drinking the beer.

330 ml bottle shared by lushawn- thanks, LeShaun! Pours a murky, dull orange-gold with a medium off-white, uneven head comprised of big bubbles. Aroma of fresh garden vegetables, barley malts, overripe fruits, and muddled herbs and spices- strange, complex, and hard-to-pin-down nose, but it works. The flavor, not as much; more watered down and even more muddled. Like Shawon says, seems more like a very old Belgian strong ale. Light-bodied, with low carbonation and a vegetal mouthfeel. Interesting.

bottle. pours a amber copper hue with a soft offwhite frothy head. complex aroma of old musty dough, melons, wet herbs, and candied sugar. comes across more as a 3-4 year old belgian tripel or strong ale. taste is fog, watered down vegetal melon dough. some oxidation. okay. in decent shape for the age. but not particularly good.

Pour at Scott’s saison tasting, pour out of 7 oz nip bottle big thanks to Scott! Hazy orange with thin white head, aroma brought notes of sour fruit, vinegar, hints of caramel, oxidized notes of cardboard and paper, hint of spice. Taste is nice sour fruit with grape, cardboard, old funky spice and grain, hints of grass, weird spices and vinegar, finishing fairly dry. Very interesting.

Bottle poured a clear gold with a lingering ring of white foam. Aromas of apple cider, citrus, straw and light spice. Palate was light bodied and crisp with a dry finish. Flavors of straw, carmel, butterscotch and light fruittiness with a crisp dry lingering butterscotch finish.

Bottle @ Scott’s Summer Saison tasting. Thanks so much Scott! Brownish orange appearance with a small white head. A bit oxidized, tangy citrusy lemonly sour aroma. Tangy, slightly vinous, bready, lemon citrusy flavor. Held up pretty well.

Completely flat pour, amber in color, and no head. The nose is just off. Cider, plastic, and green vegetables all the way on the nose. Mild malt and yeast notes, a little bit funky and perfumey. The flavor is no better. The vegetal character is more pronounced and the beer is just lifeless and bland.
