COMMERCIAL DESCRIPTION
This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

Bottle, 750ml. A cloudy amber beer with a small white head. Aroma is of spices, alcohol, grappes and Belgian yeast. Taste is somewhat sour with a citric finish with Belgian yeasts. Medium bodied with some carbonation and astringency. Sour citric character, heavy and quite fruity.

Bottle, 75cl. Opaque amber with a frothy to minimal tan head. Musky aromas of yeast, dried fruits. spices, alcohol. Medium bodied with moderate carbonation. Medium sweet with medium to heavy acidity and low bitterness. Amazing and complex fruity and yeasty flavors into a stinging finish. Extraordinary and unique.

Pana nieduża, sycząca, szybko opada do firanki. Barwa złoto pomarańczowa, mętna. Aromat bardzo przyjemny - bardzo fajne motywy funki (piwnica, siano, stara skóra) w akompaniamencie estrów w typie brzoskwini, winogrona, gruszki oraz delikatna kwaskowość kiszonej kapusty. Klasa! W smaku półwytrawne, bardzo odświeżające - jest z jednej strony fajna biszkoptowo pszeniczna podstawa słodowa i lekka słodycz moreli, z drugiej niewielka kwaśność soku z cytryny, na finiszu zaś odrobina przyprawowych fenoli i stajnia. W afterteasie pojawia się nawet fajna mineralność i pikantność... Goryczka niewielka, ziołowa, nagazowanie średnie, szczypiące, półpełne i bardzo pijalne w odbiorze. Alkohol... to ma aż 8%?
Piękny Saison, idealnie wpasowujący się w moje oczekiwania co do tego stylu, chyba najlepszy z dotychczas degustowanych! Dzikie drożdże zrobiły tu kolosalną pracę, dzięki czemu piwo jest wielowymiarowe, skomplikowane, przy tym zadziwiająco sesyjne i "soczyste" (aż pobudza ślinianki). Brawo!

A 750ml US label bottle with no best before date (Belgian label bottle has a best before end date). Poured into a Duvel tulip glass. It poured a lightly hazy golden colour with a slightly less than two finger white head that dissipated fairly quickly but left nice streaky lacing. Aromas of barnyard funk, honeydew melon, banana, clove, honey, lemon and grass. Taste is similar to the aroma, there is musty farmhouse funk, sweet honey, banana, clove, fleshy melon with a hint of citrus lemon, grass and a bready finish. Light to medium bodied with high carbonation. Overall, wow, a very nice Saison. Great aromas and mouthfeel with nice fruit and funkiness.

Bottle @Eurovision 2016 tasting. Golden yellow hazy, almost no head and very little carbonation which would have helped. Nose is sour, cooking apples, apple, citrus fruits, funk and stale piss (and not in a good way). Taste is lemon, wood and spices, good.

UPDATED: MAY 17, 2016 On tap. Hazy yellow colour, small white head. Nose is sour, lemony. Taste is medium-high sourness wih loads of friuty acids. No bitterness at all. Low carbonation. A little bit too sour for me.

On tap. Crazy saison very sour ale aroma with zero visibility under water. Tastes pretty cool starts sour gets lemon rindy. Satisfying with less hardcore sourness as time goes by. Pretty cool but not my favorite saison.

butelka, warka do 2019. jasne, miodowe, metnawe piwo z bardzo ladna piana, ktora niestety dosc szybko opada do obraczki. aromaty dosc intensywne: stajnia, kwasnosc owocowa (mirabelki? jablka? winogrona? cytryna? i niewatpliwie kiszonka jakas), jest tez troche saisonowej przyprawowosci i ziolowosci, niemniej w aromacie bardziej przypomina lambika niz saison. w smaku dominuja wlasnie te lambikowe nuty, dzikosc troche bardziej okielznana, jest kwaskowato fajnie (ogorkowo-kapusciany nieco, ale to nie zarzut), jest ciut slodko (morelowo-miodowo), goryczki prawie brak, srednio- wysycone (drobno, poszczypujaco, niemniej pod moj gust - za malo, moze gdyby polezakowac...). Sumarycznie: bardzo niestandardowy, fajny, odswiezajacy ten saison, ale zarazem baaardzo dobry. ten lambiko-saison ;) klasa.

bottle. deep hazy golden orange with one finger head. extremely fruity with apricot and peach especially. moderate sweetness with a bitter finish. funky and delicious.

UPDATED: APR 10, 2016 My 100th Saison. BB2019. Cloudy orange color with white head. Aroma after opening is citrus and apple funk, smell is more towards wheat and dough, with honey and apricots. Taste is dough, honey, funk, spicy yeasts, some red apples, apricots, spicy finish, slightly warming phenols. Quite minerally as well. But not sour. Dry and rural, but somehow still with a full body. Carbonation is medium, "moussierend". Way too drinkable for 8%. Later pours develop more of a lemon candy funkyness, but it’s still natural. It?s got the undescribable Belgian dirty ruralness that makes the best Saisons. This is beer.
