COMMERCIAL DESCRIPTION
Cask; Seasonal - December. Also available bottle conditioned.
A deliciously full bodied beer with lots of coffee and chocolate flavours. Available throughout the festive period. To add to the soft ‘feel’ of the beer, we used a small quantity of Maldon Sea salt.

Cask (gravity dispense) at the Pigs Ear Beer Festival, London on 6 December 2006. Reddish brown colour. Not particularly dark for a stout. Caramel and roast malt aroma. More toasty malt, with a light powdering of cocoa on the palate. Mouthfeel is fairly dry and quite light. Palatable but not a lot happening. Could use a bit more oomph.

Cask@Pigs Ear BF 06. Quite a light stout. Lightly roasty, with some fruity characters. Some light crystal malt notes. Malty and too light.

Pigs Ear. A bland, slightly wishy-washy, soapy, dull stout of no genuine character. Drinkable, and better than a pale lager. But not much.

Cask gravity, Pig’s Ear. Very deep brown/ruby with no head. Good aroma of choc, bit of plastic, smoke on the flavour. Like smoked mackeral. Dark fruits. Roasted malt on end. OK.

Cask conditioned - gravity dispense - Pigs Ear BF. A very dark brown beer with off-white bubbles for a head. The aroma is dry and slightly roasty with some good fruitiness. The taste is roasty and dry. Clean and acceptable, but not really enough stout like qualities.
