COMMERCIAL DESCRIPTION
Golden, bubbly, with subtle sweetness and more intensity and complexity than Farmhouse. Smells of a delicious array of fruits, with mysterious aromatic notes that defy words. Flavor offers a life-enhancing, appetite-sharpening balance of sweetness, acid, astringency, and fruitiness. Alcohol content 7.4% by volume. Available in 750 ml bottle with full cork closure

(750ml bottle) Pours a clear pale yellow body. Aroma of apple, earth, butter, band-aid, and barnyard. Flavor of apple, earth, and funky with a dry finish. Excellent.

(750ml bottle) CW3 gathering in Victoria. Courtesy of Oakes and Joe McPhee. Pours a morning-pee colour. Mildy carbonated. Nice fizziness with a good dry palate. Apple rind and seedy flavours. Nice bitterness throughout. I love this stuff.

750 ml corked and caged bottle from the Beverage Warehouse in Winooski, Vermont (July 2006), served chilled in a wine glass. Pours a surprisingly hazy golden color, lots of bubbling and with a huge fizzy snow-white head that dies very quickly -- very Champagne-like.....nose of tart, fermenting apples, barnyard funkiness and dry old rotting hay....body is heavily carbonated and actually quite dry (making me wonder how dry the "extra" can be?), tart verging on sour, quite mineralic and acidic, chalky towards the finish....along with Flag Hill Farm’s sparkler, this is one of the better strong Normandy-style farmy ciders I’ve had from America, though the mineral content at the finish detracts a bit from the refreshing qualities; still, excellent all round and probably the best I’ve had from this cidery.

From a 750 ml bottle. The body is medium gold with a thin bright white head. Lots of cascading quick moving carbonating bubbles. The aroma has massive tart apple notes with dry hay. There is a pleasing floral quality in this one. The taste is initially very sharp and dry. Almost champagne like, but it smooths as your drink and you get a lot fo the apples in the finish. There is a nice pleasing woody dry note in the middle of each drink. Pleasnant and a little sweeter than I expected.

Bottle thanks to bu11zeye. Pour with a golden body and a fading white head. Aroma is tannic, tangy, bitter, lightly musty and bright fruit. Taste is decently dry, bitter, tannic, apple core, and some acidity to near sourness. Very well rounded and balanced. Light bubbles. Tannic.

750ml bottle thanks to bu11zeye. Pours a crystal clear light gold. Aroma of granny smith apple and a touch of bret. Flavor is nice, tart, somewhat dry, crisp apple and some acidity. Mouth feel is light body and fizzy carbonation. Overall, very tasty!

Bottle. Pours a pale yellow with a very fizzy and carbonated head. Aroma of sweet fruits (apple and cherry), sweettart candies, and some slight barnyard funk actually. Flavor of tart apples, less sour than the aroma. The apple really comes out as the beer warms. Tart, acidic, and prickly mouthfeel. This is only my 2nd cider so I’m not sure where it’s place is within the ciders, but I liked it! 7/4/7/4/15 (3.7/5)

UPDATED: OCT 8, 2006 750 ml bottle. Pale straw colour, thin white head. Spritzy, bright carbonation. Light tartness in the nose, some apple skin tannins, malic acid and a bit of dusty soft leathery wildness. Flavour is slightly sweet, with a hint of dry mustiness through the middle. Apple must. Dry dusty finish. Tasty Normandy style cider.

Bottle/750ml - Poured a very clear pale yellow in color with am almost non-existent head that faded quickly to nothing. The cider is adequately carbonated though. Aroma is of tart apples and white grapes with a "funky", barnyard like character that is really not that unpleasant and supports the idea that this is really a "farmhouse" cider. Flavor is decidedly tart, acidic and slightly astringent with the intense taste of apples. Reminds me of a mildly acidic apple vinegar, but with much more flavor and complexity. The "funky" flavor, while present, only adds to its complexity. This one of the best ciders that I have ever tasted... really good.
