Brewed with 2 Belgian yeast strains, and a special wild yeast to create a complex Double White Ale with hints of orange peel and pineapple.

Draught at Capone’s: Aroma of wheat, yeast, coriander, and a hint of orange. Poured yellow in color with a small, creamy, dense, white head that diminished but lasted around the edges. Hazy. Lightly sparkling. Small lacing. Flavor is medium to heavily sweet. Tastes of wheat, grain, yeast, fruit, light pineapple, and a hint of Brett. Medium body. Dry texture. Average carbonation. Medium to heavily sweet, wheat, yeast, fruit, pineapple finish is dry. 9%ABV is completely hidden throughout.

On tap at Capones last year, poured a cloudy yellow gold, aromas are strong apricots, barnyard brett, peach nectar. Taste is light pineapple, yeast, minimal hoppiness on the flavor.

Draft at Capone’s with Dallas, Linh, Ann and Pat. Pours a hazy amber orange body with thin white lacing. Aroma is uber fresh orange and pineapple - I can’t remember another witbier that had so much pineapple dominating as this guy. Mouthfeel is creamy and soft with notes of orange, wheat and pineapple. Great.

Draft at Capone’s. Pours a nice darker amber with little head. Nice citrus balance to the belgian yeasts. strangely tart, may just be very dry, not sure if there is brett in it. Very surprising.

Tap at Capone’s. Poured a hazy glowing gold with a small, white head. Strange nose- hints at being Brett fermented. Mild citrus tartness, Granny Smith apple, herbs like sage/oregano/basil. Taste also reminds of a Bretty beer- mildly tart and dry hay/straw. Nectarine and sour apple come through. Refreshing. A little powdery in mouthfeel. Odd.

Hazy golden color with a small, white head that left nice lacing on the glass. aroma of coriander, orange, citrus, wood, vanilla, and alcohol. Taste of much of the same, some tart wheat, citrus, and vaguely wild finish.
