Sweet honey wine  -  Ecocert Canada certified organic product – 14% abv. Cuvée de la Diable is a top-of-the-line honey wine crafted the traditional way at the base of Montagne de la Diable and aged in oak casks for three years. The nobility of this nature protected site has inspired the Desrochers family to create a unique product where balance and elegance are revealed by managed oxygenation in oak casks.

Appearance: Bright pale golden with nice legs.

Aroma: Rich honey, bee wax, vanilla, oak and hints of tropical fruits.

Taste: Moderate to medium sweetness, rich honey, vanilla, oak and light alcohol.

Palate: Medium body. Really smooth. Warming finish.

Overall: I’m quite new to mead, but this might be my favorite non-Schramms/non-fruited mead. Pure rich honey with nice oak and vanilla features. Delicious!

Pours a clear golden, still, with good legs. Nose is of honey, honeycomb and moderate alcohol. Taste is moderately sweet and lightly tart with flavors exclusively of honey. I guess this is what a straight mead should taste like, though. Body is light to medium and mouthfeel a little sticky. Alcohol shows quite a bit. Overall a good drink but a bit thin and simple to my novice mead taster’s taste. Like Julien said below, maybe a little more residual sweetness (and thus body) would have helped.

2 Oz sample. Clear very pale gold pour. Aroma is really boozy, oaky, light vanilla, very oaky. Taste is oaky, lots of oaky tannins with a lot of booze, very dry, would have liked a bit more honey sweetness. Palate is med bodied, very dry with lingering alcohol warmth. Good.

Pours golden. Aroma is pure honey, rich and earthy. Flavor legit. Honey really shines. Rich honey without being overl sweet. Earthy waxy comb with a dash of vanilla. Medium in body smooth. Great mead.

375ml bottle courtesy of MeadMe. Pours still, clear Amber. Aroma is honey, wax, and vanilla. Taste is clean, crisp honey with medium body. Solid traditional mead.

Appearance : Clear amber. Gorgeous bottle design.
Aroma : Sweet floral honey. Light spices, light remover notes, light green apples, tiny tropical fruit notes. Light bee wax.
Taste : Honey, spices, alcohol. Moderate sweetness. Floral honey on the finish with light remover notes, some alcohol. Fairly persistent honey on the finish. Rather warming.
Overall : Slightly disappointing. I was expecting it to be richer. The light remover notes are bothering me a bit. The nose has some nice complexities. Good but not something I’d buy again. Gets more interesting at it warms up to ambient. Do not drink this too cold.

Glass at Dieu du Ciel. Pours a clear orange gold with a touch of ruby to it. Vinuous, soft honey and spice. Toffee, big and sweet. Tastes like the honey syrup you get on baklava. Long and sweet, caramel and honey. Soft sweet honey. All meads should be required to be at least this good.

Purchased this a long time ago when I met the producer at Dieu du Ciel (where his product was sold). We talked all night and I bought this in a wooden box with another one of his mead. Thicker gold liquid with the aromas of sweet honey, pears, apples and hints of vanilla. The taste is sweet again, but not too much to ruin a good desert wine. The same fruits found in the nose are present as well, and balance well the mouthfeel. A beautiful mead (but better when fresh... as I remember that night we had some at the pub).

Yellow in color with beautiful legs. Aroma is heavy in honey with hints of apple, pear, and a little vanilla. Taste is bountiful in honey. Smooth and goes down easy.

Clear gold liquid with great viscosity. Aromas dominated by bees wax, butter caramel and just a hint of vanilla and spices. Medium body, nice freshness despite the 14º alc./vol., spicy mouthfeel, fresh, minty, goes down pretty nicely. Long warming aftertaste of spicy mandarine. Lovely mead.
