Clean, fresh, intensely liquourous, vinous and floral honey aroma with some notes of toffee and biscuit is very complex and intriguing. Very clear golden coloured body is viscous with a nice coating on the sides of the glass. Strong, sweet floral/citrus honey flavour with some smooth, rounded rum-like alcohol notes and a lightly spicy finish. Gentle residual sweetness in the long-lasting aftertaste that has some grape-like tannins. Sweet but never cloying. Smooth texture with a medium-full, port-like consistency and mild alcohol warming. Wonderfully balanced with just a hint of the alcohol apparent. A perfect after dinner drink to bring warmth to the conversation. Bottle (Marché des Saveurs Dec. 2004).

Clear light golden body displays impressive legs, as oily looking and lasting on the sides as Jadwiga. Strong flavored aroma, very liquorous. Dominant honey flavors, very almondish nature, marzipan and fresh all around. Complex profile evolution as it warms and breathes. I love the way those wood chunks flavors dances up the nostrils when smelling and in retronasal when holding it in mouth. Mellow floral counterparts procure the necessary balance. While this is liquorous, it excels at avoiding the excessive sweetness most meads propose. It is quite dry actually despite being well medium to full bodied, still and liquorous. Warming alcohol bite, oily. Feels contentrated, but never too much thanks to the dryness and a nice leafy herbal character. This is not subtle, but not trying to be agressive either. A fine terroir product. Seek this out.

Bottle thanks to bu11zeye. Marked June 2008. Pours a clear gold, with huge sticky legs from each swirl. Aroma is awesome, oaky, honey, perfume, and alcohol. Taste is sweet, vanilla, wildflowers, sweet oak and honey. Sweet, viscous, syrupy, with a bit of alcohol to complement the flavors. Awesome!

Bottle thanks to bu11zeye. Pours a very nice looking crystal clear yellow. Aroma is VERY fruity, citrus, nice honey. Flavor is very nice, some fruitiness, little citrus, obvious honey, women should taste like this. Mouth feel is heavy body with no carbonation, very smooth. Overall, a very nice mead!

Bleached yellow. Legs are quick to form and coat the glass as they swiftly retreat. Ultra-polished floral honey aroma with a hint of toasty tannins, lime sorbet, cantaloupe, and a light alcoholic perfume. Undercurrent of richness. Dryly powdery on the palate. Opens crisply with a tonic-like edge of hardness. Surprisingly firm, due to what the delicate aroma suggests, with a tightly wound display of sage, musty oak, and alcoholic warmth. Hint of tangy acidity. The center is delightfully hollow and devoid of flaw, which allows for a seamless transition into a nutty tannin squeeze combined with a less forceful display of assorted melon and sugar-drizzled pears. Perpetually crisp and herbaceous, with a cleansing yet understated breath of alcohol fused with dry oaky tannins which softly skim the palate. A classy mead. Thanks, Rastacouere.

Yellow in color with beautiful legs. Aroma is heavy in honey with hints of apple, pear, and a little vanilla. Taste is bountiful in honey. Smooth and goes down easy.

Pours a clear pale gold color, the liquid sticks a bit to the glass. Very good aroma of citrus, honey and alcohol, it’s a bit tart too. The flavor is superb, sweet honey, tart citrus and warming alcohol. The body is thick and the texture is syrupy. This is an excellent mead.

Purchased this a long time ago when I met the producer at Dieu du Ciel (where his product was sold). We talked all night and I bought this in a wooden box with another one of his mead. Thicker gold liquid with the aromas of sweet honey, pears, apples and hints of vanilla. The taste is sweet again, but not too much to ruin a good desert wine. The same fruits found in the nose are present as well, and balance well the mouthfeel. A beautiful mead (but better when fresh... as I remember that night we had some at the pub).

( 375ml bottle thanks to bu11zeye) Pours very pale yellow with nose of apple, cotton candy and vanilla. Taste is alcohol, apple, cotton candy. This is delicious!!
