COMMERCIAL DESCRIPTION
Élaboré à partir de 17 variétés de pommes à cidre à majorité amères et douces amères (Marie Ménard, Chevalier Jaune), récoltées à la main dans les vergers de l'exploitation menés en Agriculture Biologique depuis 1997. Ce cidre mis en bouteille plus rapidement reste sucré et moins alcoolisé que les cidres brut.

Dark golden body, no head; Very special nose, apple peel tar like, deep, full and complex; The body is a bit to sweet but still chalky dry; Very dry almost harsh finish, a little to sweet and slightly oxidized.

Bottled. A hazy golden cider with a thin white head. The aroma has notes is cloying with notes of apples and other fruits. The flavor is sweet and dominated by apples, leading to a tart finish.

75 cl bottle. Pours clear and golden orange with a quickly gone head. Dry earthy and wooden dry phenol and apple aroma. Dry and mild fruity apple flavoured. Light bodied. Distinct sulphorish and dry into a mild fruity finish.

Bottle, bought at Le Gourmand, Cph. Pours a clear dark golden with a ton of bubbles reaching for the surface. Head is only apparent as it is poured, slightly off white. Aroma is lots of apples, oak, pine. There is ripeness and light tartness to the apples. Mouthfeel is fresh at first, then turns very dry. Flavour is mild, not that sweet or powerful apples. The apples appear naturally, but are lightly tart and dry. Really nice finish, too bad that the centre is so subdued.
