COMMERCIAL DESCRIPTION
The first bottling of the 2008 vintage came from one barrel... A Pappy Van Winkle barrel that held Bourbon for 23 years. We have 7 more of these barrels ranging in age from 17 to 23 years. The next bottling is a blend of three of these barrels. The blend which will be marked ’2nd bottling’ or something to that effect so they can be identified. The remaining 4 barrels will be split into draft and yet a third bottling. The 2009 Eclipse will be aging longer than the 2008. The 2008 aged for 180 days and the 4 remaining barrels are most likely going to hit 225 days. We are brewing the base Imperial Stout in March allowing us even further aging time prior to it’s mid-December release... The amount produced will increase from 17bbls to 34bbls for ’09.

Several different releases including unwaxed, "Brewers Reserve", Pinkish Wax. Available starting Late Fall 2008.

22 fl oz bottle. Pours dark brown to black with a small tan head. Aroma is roasted malty and dark chocolate. Light vanilla. Dark roasted malty and caramelish. Light wooden.

2008 Vintage, Purple Wax. Bottle # 125. Thanks to Hallinghansen. Pours black with a small beige head. Nose is vinous and complex. Sweet bourbon, wood, coffee and liquorice. Subdued and well aged - promising. Flavor is liquorice, smooth bourbon, wood, coffee and liquorice. Pleasant warmth. Silky smooth and soft. Incredible.

Catchup rating. Bottle shared by Marcus. #19; 2008; 2nd bottling. Pours very black with no head. Aroma - drown in treacle, burnt malt, oak, vanilla, bourbon, anise, chocolate? Full bodied with mild carbonation. Discernible heat. flavor of smooth burnt malt, chocolate and lots of bourbon. Oak. Superlative.

Bottle shared by alexsdad06. Poured a clear dark brown color with a large frothy brown head that lasted with good lacing. Moderate to heavy roasted chocolate, caramel, rye and alcohol aroma. Heavy bittersweet roasted malty flavor with a heavy bittersweet and small alcohol bite finish of long duration. Full body with a smooth texture and flat carbonation. This is a standout beer.

Bottle… Pours dark brown with a brief, khaki head. The nose presents tons of earthy oak and ethanol, subtle chocolate, a splash of Pappy Van Winkle and a hint of acetaldehyde. Full-bodied and oily with modest carbonation. The flavor is cranked with dark chocolate and ethanol with a rumor of acetaldehyde. Finishes chocolaty and warming. I have no idea how there can be acetaldehyde in a three-year-old bottle of beer, but I smell and taste what I smell and taste and unfortunately, it dashed some of my enjoyment of an otherwise excellent beer. On tap at Boulder Strong Ale Fest poured atranslucent dark brown with a small lingering brown head. Aromas of bourbon, fruittiness, vanilla, oak, dark chocolate and carmel. Palate was light to medium bodied and smooth. Flavors of bourbon, vanilla, fruittiness, oak, milk chocolate and carmel with a smooth lingering bourbon finish.

Draught. Pours opaque with a small, fizzy, light brown head, mostly diminishing with spare lacing. Aroma is heavy malt (chocolate, toffee, nutty), average hops (perfume), average yeast (dough) with notes of bourbon, vanilla, and dates. Full bodied, slick texture, soft carbonation, and a sweet-dry finish. Long duration, moderate sweetness, acidity, and bitterness.

UPDATED: DEC 17, 2011 2008 Pink wax (Pappy Van Winkle). Bottle number 22 with many thanks to Billschmeinke. Pours with a minimal brown head over a deep black body. Aromas of cola, brown sugar, tobacco, earthy, sweet, estery, fudge, coconut, light alcohol caramel and vanilla. Light oak presence. Flavors are nutty, nougat, fudge, vanilla, cola, and coconut. Rich barrel, and aged bourbon flavors. Oily. Smooth and rich. Minimal tannins, medium carbonation. Creamy, lightly warming. The best of the Eclipse variants that I have had.

Another bottle. Starting to thin a bit. Flavors getting a bit more mellow. I’d say drink up at this point (at least move to the fridge). Still good, but not what it was.
