COMMERCIAL DESCRIPTION
4 versions of Eclipse this year. The lions share will go to Evan Williams Single Barrel. Barrels were 10-13 years old. These barrels were kept in an ambient temp storage situation. Approx 180 days in the wood. Should be somewhat bourbon forward with notable barrel character behind the spirit. Beer may have thinned due to storage temp and mild vinous notes based on oxygen pickup during aging. Estimated bottle count...3500. Subject to change...

Evan Walker version. (BLACK WAX with "2010")

2010 (Bottle #172) … Dime-n-Hetfield’s "All the Way to 1K" ThrowdownThis beer rocks!… Hazy, dark brown ale with a small, creamy, khaki head. Good retention. The rich, sweet bouquet offers mocha, oak and sourmash intermingled with an abundance of roastiness. Full-bodied with a fatty mouthfeel and mild carbonation. The flavor is sweet and boozy – praline, bourbon, oak and woody tannins. Finishes singed, caramely and moderately bitter… then dries out. Kudos to dimenhetfield for supplying this bottle of world class beer!

Dark brown pour, almost black with a tan head. Bourbon, chocolate aromas with Chocolate, toffee and roasted malts on the taste. I thoroughly enjoyed the beer.

Out of the bottle at Gourmet Haus during a tasting of all 8 2011 Eclipse series. Dark aroma and deep black color. Flavors are well rounded with chocolate and bourbon highlighting the profile.

Bottle. Coco puff nose. Dark brown/black pour with a tan head. Silky with lots of bourbon, chocolate, caramel, and roasted malts. Good, not great, body, well balanced, just a terrific imperial stout...

From notes. First reviewed 9/26/2011. Poured from a 22 oz. bomber into a tulip. The pour is nearly black with some soft brown bubbles that never truly form into a head. Very quickly I am looking at a viscous black liquid with no cap. The smell is of the dark chocolate, espresso, and roasted malt that the other variants have, as well as a full and fairly rough bourbon aroma. Strong Evan Williams flavor really dominates the flavor and the sweetness I have noticed in the other Eclipse treatments. Roasted malt, dark chocolate, some light dark fruits and a bit of espresso all blend together nicely, with a touch of woody oak at the end. The body is on the full side of medium, with smooth, creamy carbonation and a bourbon stickiness. Another good treatment of Eclipse, although the Evan Williams might be a bit harsh for my palate. My sense is that as this ages, it will develop nicely.

Bottle shared by STL crew at tasting, thanks boys! Pour is black with a thin tan head. Aroma and flavor are loaded with roasted malt, faint coffee, light vanilla, a touch of sweetness and some alcohol burn. I found this one to be the hottest of the bunch. Seems like a year should have mellowed it out a bit but still hot to me. Still a good beer, but i liked some of the more recent ones better.

22 oz. bottle shared by birchstick- thanks again, Jon! Black wax, "2010". Pours a deep, opaque brown (darker than all the 2011 ones), with a small tan head. Sweet aroma, with molasses, chocolate, vanilla, caramel malts, and oak. The flavor is equally sweet, toasty, oaky, and sugary, with some balancing roastiness. Medium-bodied, with low carbonation and a smooth, sweet mouthfeel. Very nice.

2010 bottle. pours black with a finger of milk chocolate head, good lacing. smell is chocolate, bourbon, some dark fruit, light oak, with a hint of vanilla. taste is more of the nose, good bourbon character, molasses, oak, dark fruits, and a light roasted finish. a little thin, but good carbonation and very easy to drink. in my opinion this was much better than the HH version.

Bottle. Pours a dark brown with a deep tan head that dissipates quickly to the edges. Aroma has a nice combination of dark grains, roasted malts, vanilla and a good amount of bourbon. Flavor has bourbon up front with dark chocolate, roasted malts and coffee in the finish.
