Imperial Eclipse Stout aged in special release Elijah Craig 20 Year Bourbon Barrels

Note from the brewer: The white wax 2011 Eclipse was all 20 year. There was no such brand when we acquired barrels, so we called it 18 year. We have since found out that the 20 year old barrels were dumped for a 20yo Elijah Craig special bottling.

22 oz. bottle, white wax. Sampled along with all the other 2011 releases. Pours a deep, dark amber-brown with a small filmy head. Aroma of coconut, toasted malts, oak, toffee, and molasses. The flavor brings the same toastiness, coconut, brown sugar, and roasted malts along with some dark fruits. Medium-full bodied, with a sweet finish and medium carbonation. This and the Grand Cru were my favorites of the 2011 series.

Bottle shared at the RBWG in Austin. Dark pour with a brown head. Aroma is wood, dark chocolate, vanilla, and alcohol. Taste is alcohol, wood, more dark chocolate, and some light spice.

Poured into a snifter. 2011 vintage, bottle #4016. White wax so I have the correct listing. This is my third version of this year (EC 12 and BT blend) and fourth overall (í10 EW). 4.5 A: Black color. One and a half fingers of creamy tan head. Retention is good and a big ring of lacing is left. Like the others, this one looks good. 4.0 S: This is as smooth as the EC 12 was, but itís much more lively. First, the bourbon brings out the chocolate in the stout much like the BT blend did. The bourbon itself is leathery, mildly fruity, and earthy. Booze is in check and there are no signs of astringency or off-flavors. The barrel gives a soft vanilla that complements well. Soft roastiness from the stout. I very much like the aroma, but I still want more from the stout. 4.5 T: I must say Iím impressed with the taste. I expected all of the variants to be let downs due to the simplicity of the base beer, but this is too tasty not to love. The EC works magic in this. The strongest flavor is creme brulee with leather, melon, light dark fruit, and light earthiness. Slightly boozy, but itís actually a nice addition and super smooth. Soft roast and moderate chocolate from the base stout. 4.0 M: Hell, even the mouthfeel is better. Itís the same medium body, but thereís a noticeable increase in the creaminess. Good moderate carbonation. Super smooth. 4.5 D: Iím very glad to have had this and so far this is the only variant Iíve had that is worth what I paid. Very tasty beer. 2/25/12. Bottle shared at RBWG 2012. Deep black pour with a small brown head. Wonderful bourbon character - wood, bourbon, vanilla, fudge, and more - on top of more chocolate and coffee. Delicious flavors of bourbon, vanilla, fudge, coffee, chocolate, a bit of booze, and more. Nice!

Nice black pour, brown head. Sweet chocolate, bourbon, vanilla, toffee, dark brown sugar. Flavor is sweet, big bourbon notes, oak, molasses. Damn good!

2011 White waxed bottle A - Darkness with a finger of milk chocolate head, a thin sheet that sticks around and leaves some legs. S - Alcohol heat, oak, vanilla, cocoa. T - Nice roasted malts, cocoa, vanilla, toffee, bourbon, oak, light coconut, and a light dark fruit that falls perfectly into place. M/D - smooth and creamy, slightly tannic from the barrel. A great treatment for the base beer, one of my favorites to date, and the only real complaint would be the alcohol present in the nose.

Thanks to Beer Savant for sharing Bottle #2516. Pours pitch black with a medium tan head that dissipates steadily. Patches of lacing on the glass. Oaky bourbon aroma with notes of caramel, vanilla and chocolate. Rich and smooth body with flavors of vanilla, oak, caramel malt and dark chocolate. Booze is rather subtle throughout. The finish is woody with a lingering dark malty aftertaste. Very good beer all around.

Bottle #2516 shared by a friend for rating #3,000. Darkest brown pour with a thin tan head. Aroma of bourbon, chocolate, vanilla, oak, dark fruit and honey. Chocolate and vanilla flavor up front, then some dark fruit and bourbon before a brandy-ish finish. Heat was very manageable, likely due to the 2 years spent in the barrel. Spectacular.

UPDATED: JUN 13, 2013 650ml white-waxed bottle. Bottle # 4224. It pours a thick, viscous dark blackish brown with a tall foamy but frothy tan head that dissipates with a few skids of lacing. A thick tan froth sits atop the beer. The smell is amazing. It is hot but in a pleasant bourbony way. The bourbon explodes in the smell, nice hints of wood, caramel, and vanilla dominate. There is a noticeable pronounced fruitiness that is rich and intoxicating. The base stout comes through as well with some cocoa richness and bready but dark, roasty malts. The flavor is dominated by bourbon in a good way, but the stout isnít lost. The initial flavor is bourbon and wood, rich, complex layers of wood and vanilla project over a nicely bitter stout base. The heat isnít overwhelming, but it is a key component in the flavor profile. There is a fruitiness again here that is devilishly good. Mid to late palate brings the chocolate and roastiness and it is fantastic, the finish is sweet. I have never had a barrel aged beer that had this pronounced and fresh of a bourbon flavor. Normally I hate beers because the bourbon-forward, but this one has changed my mind or something, maybe it just speaks to the expertise of this particular brewery with barrel aging.
