COMMERCIAL DESCRIPTION
Imperial Eclipse Stout aged in special release Elijah Craig 20 Year Bourbon Barrels

Note from the brewer: The white wax 2011 Eclipse was all 20 year. There was no such brand when we acquired barrels, so we called it 18 year. We have since found out that the 20 year old barrels were dumped for a 20yo Elijah Craig special bottling.

Vintages:
2011 Imperial Eclipse Stout (Elijah Craig 18/20 Year Barrel) = White Wax
2012 Imperial Eclipse Stout (Elijah Craig 20 Year Barrel) = White Wax

White wax bottle. Opaque black pour with intense, lacy creamy tan head. Strong powerful bourbon aroma, very chocolaty, roastiness is pretty well absent, rich layered vanilla, bourbon woody notes, light spiciness. Taste is very sweet, molasses, licorice, bourbon and dark chocolate. Quite decadent. Palate is well constructed, rich, and mellow, nice alcohol warmth and well dosed carbonation. A bit over-done, but still quite tasty.

We did a side by side of 2011 (18 year Elijah Craig barrel)(bottle #317) and 2012 (20 year Elijah Craig barrel)(reserve). The score reflects the 2012 version, both white wax tops. 2011 Version A: Dark Opaque Hue, Passes No Light, Brown Head Ring, Some Lacing S: Vanilla, Bourbon, Mildly Oaked T: Bourbon, Mild Vanilla, Mild Brown Sugar M: Average Carbonation, Medium to Full Bodied, Semi Boozy, Mildly Sweet 2012 Version (barrel reserve) A: Dark Opaque Hue, Passes No Light, Brown Head Ring, Some Lacing S: Mild Bourbon, Mild Vanilla, Mildly Oaked T: Boubon, Vanilla, Mild Brown Sugar, Mild Honey M: Average Carbonation, Medium to Full Bodied, Mildly Sweet, Mildly Boozy Overall, the 2012 was the better of the two bottles, no boozy heat, very smooth and the tastes blended very well, outstanding.

2011 bomber # 3279 white wax. Thanks kegbear! Aroma is wonderful chocolate and malt with some hints of bourbon. Pours a beautiful brown with frothy cream head. The taste is vanilla chocolate with some creamy malt notes in it. Its like drinking the best coffee ever. Super balanced without any alcohol burn for 10%. Wow just incredible beer. Damn delicious would drink again and again.

2011 release, bottle # 5619 thanks to Dakine. Dark pour with a brown head. Aroma was mellow bourbon, roasted malt, licorice and vanilla. Taste was just awesome. Roasted malt and bourbon meld together to form a beer that you just want to sip forever. This is another "why did I share this with my brother" beer. Wonderful aftertaste, creamy mouth feel, a plethora of goodness. A first rate drinking experience.

2011 bottle thanks to Sparky! This pours black with a decent mocha head that thins quickly. Aroma of this is vanilla, brown sugar, toffee, oak, sweet roasted malt and chocolate. Taste is sweet chocolate, brown sugar toffee, caramel, oak, roasted coffee, malt and barrel char. Sweet balanced, full bodied stout with great complexity. Amazing beer! Best 50/50 Eclipse yet!

Bottle shared at GBBF ’13, thanks to Joris, 13/08/13. Mid black with a thin tan head. Nose is bourbon, oaky, toffee, chocolate. Taste comprises dark chocolate, earthy tones, dark toffee, bourbon infused wood, hint of bitterness. Full end of medium bodied, fine carbonation, smooth on the palate. Great stuff, plenty of depth to the flavours and easy drinking belying the 10% ABV.

2011 Release, Bottle 3788. Pours a dark brown with thin light brown head, settles quickly with no lacing. Aroma is strong bourbon, vanilla, sweet, oaky. Flavor is mod bourbon, strong vanilla, with a chocolate mild roasted finish and a sweet, oaky, vanilla, bourbon aftertaste. Sweet, mild roast, more so as it warms. Some nice balance. Soft carbonation, medium body to full body. Smooth, slightly sticky texture and a warm finish. Lacks some of the body and fullness that Uncle Jacob’s has. A solid bourbon barrel imperial stout, though it hardly merits the price. Could just as well have bought two UJS.

2011. bottle #3444, white wax. pours just a touch denser than the other Eclipse variants (so we’re off to a great start) with a thick, creamy dark beige head that leaves tight rings of lace. aroma is simply excellent with big notes toasted oak, bourbon, vanilla, toffee, and dark roast backed by chocolate cake, muted coffee, molasses, and dark fruits with a hint of brown sugar. flavor is truly wonderful as well as the dark notes of chocolate, molasses, anise, and heavy roast come to the forefront with charred oak barrel, bourbon, honey, vanilla, and dark fruit notes of black cherry and plum bringing up the rear. palate is definitely richer than most of the other Eclipse variants with smooth carbonation and a dry, warming finish. this one just feels more integrated and complex than the other Eclipse’s. my favorite of the bunch. well done.

UPDATED: MAR 23, 2014 Champinjon....underbar...bourbon...underbar...helt underbar. Värdsklass. Choklad. Oerhört balanserad. Lite molass.
