COMMERCIAL DESCRIPTION
Imperial Eclipse Stout aged in special release Elijah Craig 20 Year Bourbon Barrels

Note from the brewer: The white wax 2011 Eclipse was all 20 year. There was no such brand when we acquired barrels, so we called it 18 year. We have since found out that the 20 year old barrels were dumped for a 20yo Elijah Craig special bottling.

Vintages:
2011 Imperial Eclipse Stout (Elijah Craig 18/20 Year Barrel) = White Wax
2012 Imperial Eclipse Stout (Elijah Craig 20 Year Barrel) = White Wax

Bottle... This beer rocks!... Pours tar black with a small, creamy, khaki head. The aroma is a lush swirl of fudge, bourbon, toasted coconut, pouch tobacco and vanilla. Full-bodied with a buttery mouthfeel and laid-back carbonation. The flavor is sweet and singed - dark chocolate, tobacco and charcoal accompanied by traces of vanilla and alcohol. Finishes moderately sweet and warming. World class beer. Bottle courtesy of newcigarz!

Bottle. Opaque black liquid with small to medium tan head. Aroma of wood, bourbon, booze, chocolate, raw sugar, licorice and light coffee. Taste is light to medium sweet and light to medium bitter with notes of coffee, wood and bourbon. Full bodied with low to medium carbonation, very smooth. Awesome.

66cl Bottle at Sloshfest, 6 of the 2011 bottlings side-by-side. Black colour, beige-brown head. Aroma is soft sweet bourbon, oak, vanilla, hard roasted malts, chocolate, molasses. Flavour is sweet, smooth bourbon, hard roasted malts, coffee, molasses, chocolate, bitter roasted finish. Fullbodied. A lot better than the EC 12y.

Shared this with Thorpe and Thorpette after they brought over a steak dinner recently (they’re total ballers). Amy was holding and ogling my newborn son, so she drank hers with a crazy straw. Anywho... The beer is dark brown with a nice beige head. Noticeably more carbonation than the Brewmaster’s Grand Cru I opened recently. Nice aroma - bourbon, vanilla, chocolate, oak. A lot of wood character. The best of the series to this point, though I still have many to work through. Surprisingly pleasant notes of toasted marshmallow, coconut, vanilla. Really digging the subtle complexities at work here. This was served at 60 degrees, so many of the more delicate characteristics jumped out right away. Of course, bourbon, chocolate and oak are front and center, but the nuances steal the show in this beer. Medium to full bodied with adequate carbonation. Still a bit on the low side. Silky and smooth on the palate. A winner. I definitely recommend it. Serving type: bottle Reviewed on: 02-22-2012

Bottle white wax #1489 2011 bottling. Pour has a dark brown color bordering on black with a covering of light brown head. Aroma has big juicy bourbon, medium sweetness, heavy rich malt, mild roast, oak, and mellow oxidation. Mouthful is a medium and there is low side carbonation. Flavor comes off with plenty of malt, some roast, medium sweetness, sweet juicy bourbon, raisins, oak, vanilla, mild oxidation, and a lingering finish with some mild heat. Extremely smooth and has taken to the barrel treatment very well.

Bottle (#1511, 2011), thanks to Bruce at THE Eclipse Tasting, 2012. It pours very dark brown with a thin, bubbly light tan head that almost instantly dissipates. The nose is much softer than the 12yr version, vanilla, oak, marshmallow, brown sugar, toffee and soft dark malt. The taste is roasted malt, sweet toffee, charcoal, light smoke/charcoal, medicinal, burnt toast, bitter chocolate, mellow bourbon and warming alcohol on the finish. Full body, fine, prickly carbonation and sticky mouth-feel. Rich, yet smooth, mellow and well balanced. Pips the 12yr version to the post.

THE Eclipse Tasting. Opaque dark brown beer, good tan head. Smooth palate, superfine carbonation. Light and minerally fresh. Smooth dark chocolate. Smooth bourbon. A little dark fruits Soft finish. Unsurprisingly very similar to the 12 Year but this is smoother and more well rounded and just errrrr better!

Bottle at THE Eclipse Tasting, London. Bottle #1511, white wax. Many, many thanks to Bruce for providing this fella. Pours black-brown with a frothy, bubbly tan head. Boozy brownie nose with notes of molasses and brown sugar. Rich, sweet flavor with heavy dark chocolate, dirt, some alcohol, brown sugar, chocolate cake. Full bodied, lightly chewy, with fine carbonation. Moderately warming on the finish with more brownies, booze-soaked raisins, some baking cocoa, mellow roast, brown sugar and other dark fruits. Excellent. One of the best Eclipse beers on the evening.
