COMMERCIAL DESCRIPTION
Imperial Eclipse Stout aged in special release Elijah Craig 20 Year Bourbon Barrels

Note from the brewer: The white wax 2011 Eclipse was all 20 year. There was no such brand when we acquired barrels, so we called it 18 year. We have since found out that the 20 year old barrels were dumped for a 20yo Elijah Craig special bottling.

Vintages:
2011 Imperial Eclipse Stout (Elijah Craig 18/20 Year Barrel) = White Wax
2012 Imperial Eclipse Stout (Elijah Craig 20 Year Barrel) = White Wax

Bottle courtesy of cocoapuph - thanks! Deep black pour with soft tan head. Light roast malt, vanilla creme, and faint oak. Flavor is sweet mix of vanilla creme, marshmallow, and lightly roasted malt. Some dark fruit. All smooth and without booze. Good palate presence, with thick malt qualities. A sweet imperial stout.

Bottle I brought to Jamesís place. Pours a dark chocolate brown with fuzzy beige head. Massive but balanced nose of marshmallow, coconut, and milk chocolate. Flavor is fucking delicious! Loads of sweet and toasted coconut, silky milk chocolate, and sweet whipped cream. That great coconut taste with none of the suntan lotion notes that can come with it. French silk pie flavors with bourbon and vanilla extract. Thick, velvety body with vanilla, oak, and French silk pie in the finish. Absolutely delicious and close to perfection as a dessert stout.

Poured into a snifter. 2011 vintage, bottle #4016. White wax so I have the correct listing. This is my third version of this year (EC 12 and BT blend) and fourth overall (í10 EW). 4.5 A: Black color. One and a half fingers of creamy tan head. Retention is good and a big ring of lacing is left. Like the others, this one looks good. 4.0 S: This is as smooth as the EC 12 was, but itís much more lively. First, the bourbon brings out the chocolate in the stout much like the BT blend did. The bourbon itself is leathery, mildly fruity, and earthy. Booze is in check and there are no signs of astringency or off-flavors. The barrel gives a soft vanilla that complements well. Soft roastiness from the stout. I very much like the aroma, but I still want more from the stout. 4.5 T: I must say Iím impressed with the taste. I expected all of the variants to be let downs due to the simplicity of the base beer, but this is too tasty not to love. The EC works magic in this. The strongest flavor is creme brulee with leather, melon, light dark fruit, and light earthiness. Slightly boozy, but itís actually a nice addition and super smooth. Soft roast and moderate chocolate from the base stout. 4.0 M: Hell, even the mouthfeel is better. Itís the same medium body, but thereís a noticeable increase in the creaminess. Good moderate carbonation. Super smooth. 4.5 D: Iím very glad to have had this and so far this is the only variant Iíve had that is worth what I paid. Very tasty beer. If the base stout was better, this would be a favorite of mine for sure. Serving type: bottle Reviewed on: 01-24-2012 01:28:08

2011 release, bottle # 5619 thanks to Dakine. Dark pour with a brown head. Aroma was mellow bourbon, roasted malt, licorice and vanilla. Taste was just awesome. Roasted malt and bourbon meld together to form a beer that you just want to sip forever. This is another "why did I share this with my brother" beer. Wonderful aftertaste, creamy mouth feel, a plethora of goodness. A first rate drinking experience.

Poured into a snifter from a 2011 650ml bottle.

A: Deep opaque brown, only seen through on the edges. Thin tan head quickly disappears leaving a small coating.

S: Mellow, but mostly bourbon and oak, slight sweetness comes through.

T: Same as the smell, huge alcohol bourbon sweetness with vanilla mixing in and out. Slight chocolate notes, but very subtle. Easy to sip.

M: Full bodied with light fizzy carb, syrupy.

O: The price of this is my biggest gripe, my second gripe is the price. I like this, but for $30.

2012 Bottle. Pour is black with a small tan head. Aroma is of caramel, maple, soy sauce, and oak. Flavor is a bit stronger with notes of bourbon, oak, vanilla, and brown sugar. The bourbon heat picks up a little on the finish.

Pours black with almost no head. Aroma is fucking fantastic: dark chocolate, honey, bourbon, muscovado sugar, caramel, dark red fruit. Taste is dark chocolate, muscovado sugar, caramel, coffee, vanilla, bourbon, honey. Mouthfeel is silky smooth with low carbonation. Aftertaste is bourbon, vanilla and chocolate ntes. My god!!
