COMMERCIAL DESCRIPTION
Imperial Eclipse Stout aged in special release Elijah Craig 20 Year Bourbon Barrels

Note from the brewer: The white wax 2011 Eclipse was all 20 year. There was no such brand when we acquired barrels, so we called it 18 year. We have since found out that the 20 year old barrels were dumped for a 20yo Elijah Craig special bottling.

Thanks to largadeer for sharing a pour from his bottle. Very dark brown in color, but letting a tiny bit of light through. Not black. A small tan head sits on top and fades to a bubbly ring. The aroma is a nostril assault of awesomeness. Big rich dark and milk chocolate, mild roast, premium quality bourbon, oak, vanilla, and black cherry. The flavor has an insane complexity to it, and then on the finish it just gets better. All the amazing flavors that almost any past Eclipse has had - sweet chocolate, roast, toffee, dark fruit, vanilla, oak, and bourbon - incredibly balanced and tasty. Intensifies as it sits in your mouth. Medium-full bodied and incredibly smooth on the palate with soft carbonation. Unbe-mother-effing-lievable beer. Dude.

Big bourbon notes and a nice dark black with a very good amount of carbonation for a BB RIS. Sweet vanilla and oak mixed with some milk chocolate. Thick mouth feel and a wonderful bourbon taste that lingers for quite sometime. Loved this beer and would put it up there with BCBS. Very nice wish I had another bottle!

UPDATED: JUN 13, 2013 650ml white-waxed bottle. Bottle # 4224. It pours a thick, viscous dark blackish brown with a tall foamy but frothy tan head that dissipates with a few skids of lacing. A thick tan froth sits atop the beer. The smell is amazing. It is hot but in a pleasant bourbony way. The bourbon explodes in the smell, nice hints of wood, caramel, and vanilla dominate. There is a noticeable pronounced fruitiness that is rich and intoxicating. The base stout comes through as well with some cocoa richness and bready but dark, roasty malts. The flavor is dominated by bourbon in a good way, but the stout isn’t lost. The initial flavor is bourbon and wood, rich, complex layers of wood and vanilla project over a nicely bitter stout base. The heat isn’t overwhelming, but it is a key component in the flavor profile. There is a fruitiness again here that is devilishly good. Mid to late palate brings the chocolate and roastiness and it is fantastic, the finish is sweet. I have never had a barrel aged beer that had this pronounced and fresh of a bourbon flavor. Normally I hate beers because the bourbon-forward, but this one has changed my mind or something, maybe it just speaks to the expertise of this particular brewery with barrel aging.

Bottle @ The Forge Publick House. A stop on grand tour of Fort Collins breweries and bars with Tim, Aaron and Armin, Thanks !! Pours pitch black with a creamy tan head. Aroma is roasted malt, bourbon, oak, coconut, vanilla, filled dark chocolate. Taste is malts, bourbon, oak, vanilla, rich dark chocolate, caramel, toffee. Full body, low carbonation, long lasting bourbon finish.Simply put = fantastic beer. 250212

Bottle @ The Forge Foco. Deep brown appearance with a very nice, bubbly, dark brown head. Very rich caramel, big toffee, thick woody, vanilla, delicious bourbon, dark chocolate aroma. Excellent aroma- couldn’t ask for more. Super smooth, incredibly tasty, dark caramel, chocolate, big vanilla, super smooth, delicious bourbon flavor. Toffee, chocolate aftertaste. A bit of booze on the finish but super smooth overall. Delicious, sweet dessert beer that is so fucking smooth. Bravo. Edit: as the beer warms up, the alcohol is a lot more noticeable in the nose.

Bottle I brought to James’s place. Pours a dark chocolate brown with fuzzy beige head. Massive but balanced nose of marshmallow, coconut, and milk chocolate. Flavor is fucking delicious! Loads of sweet and toasted coconut, silky milk chocolate, and sweet whipped cream. That great coconut taste with none of the suntan lotion notes that can come with it. French silk pie flavors with bourbon and vanilla extract. Thick, velvety body with vanilla, oak, and French silk pie in the finish. Absolutely delicious and close to perfection as a dessert stout.

Bottle courtesy of Anthony. Hands down, beer of the night. Pours a deep black body with thick brown head and nice lacing. Aroma is sweet vanilla, light milk chocolate, soft oak, light molasses and syrup. Mouthfeel is creamy and divine with notes of sweet vanilla, oak, butter, bourbon, marshmallows, chocolate, and a touch of maple syrup. This was one of the creamiest, most indulgent stouts I can remember having in a very long time.

Thx. to tderoeck / Tim for this one. 65 cl. beautiful bottle – snow aged – lovely white wax. A beauty to behold, 2011 vintage. Pours very dark brown / black with a mocha head. Smell is booze, sweet mocha, creamy with lots of bourbon, very heavy, vanilla, sweet wood, milk chocolate, touch molasses,… Taste is very heavy on bourbon sweet, lots of barrel, this is very heavily aged, almost as if to mask the base beer which is not really available unless if I am mistaken, caramel, sweetness, toffee, sugar, milk chocolate, liquorice, touch molasses, base feels almost a bit thin for an RIS but it is very heavily aged. Creamy body. Glad to try one of these.

Pours black with dark brown edges - looks a bit thin, small mocha head which settles quickly. Smells almost identical to Bourbon County which is a good thing and amazing for a ~10% beer - dark chocolate, bourbon, brown sugar, vanilla, hint of coconut. Taste is great as well - a perfect balance of dark chocolate and bourbon, oak, booze noticeable but provides pleasant warmth - I must say this is the most flavor I’ve experienced in an under 12% beer. Hate to compare it to bourbon county again but this is very similar and almost more drinkable without all the booze and thick body. Great stuff

Bottle at GBBF 2013. Pitch black beer with a nice brownish head. Roasted chocolate aroma, whiskey, vanilla, hay, creamy, cocoa, prunes, raisins, mint notes, woody, licorice notes, some caramel. Roasted flavor, lots of vanilla, mint, licorice, prunes, dades, warming alcohol, milk chocolate, woody notes, bourbon, caramel, cream. Full bodied. Lovely vanilla finish with bourbon, caramel, licorice, milk chocolate and some prunes. Almost perfection!
