COMMERCIAL DESCRIPTION
Imperial Eclipse Stout aged in special release Elijah Craig 20 Year Bourbon Barrels

Note from the brewer: The white wax 2011 Eclipse was all 20 year. There was no such brand when we acquired barrels, so we called it 18 year. We have since found out that the 20 year old barrels were dumped for a 20yo Elijah Craig special bottling.

Vintages:
2011 Imperial Eclipse Stout (Elijah Craig 18/20 Year Barrel) = White Wax
2012 Imperial Eclipse Stout (Elijah Craig 20 Year Barrel) = White Wax

650 ml bottle. 2011 vintage. Pours a dark cola brown with small light tan head settles to a ring, and leaves some light lacing on the glass. The aroma is big cocoa, bourbon, some marshmallow, vanilla, and toffee. The initial taste is sweet with mashmallow, cocoa, some bourbon and vanilla, toffee, caramel, and a bit of roastiness. A hint of alcohol on the finish. Medium body. Medium carbonation. Quite awesome. The flavors all come together quite nicely here. This was quite enjoyable, especially after the big letdown from the brandy. 9.4.9.4.18

UPDATED: DEC 17, 2013 Bottle at Darkness Day 2012. Very dark pour with vanilla and bourbon. Actually liked the 12 year variant a touch better but this is awesome.

Bottle. Opaque black liquid with small to medium tan head. Aroma of wood, bourbon, booze, chocolate, raw sugar, licorice and light coffee. Taste is light to medium sweet and light to medium bitter with notes of coffee, wood and bourbon. Full bodied with low to medium carbonation, very smooth. Awesome.

2011. bottle #3444, white wax. pours just a touch denser than the other Eclipse variants (so we’re off to a great start) with a thick, creamy dark beige head that leaves tight rings of lace. aroma is simply excellent with big notes toasted oak, bourbon, vanilla, toffee, and dark roast backed by chocolate cake, muted coffee, molasses, and dark fruits with a hint of brown sugar. flavor is truly wonderful as well as the dark notes of chocolate, molasses, anise, and heavy roast come to the forefront with charred oak barrel, bourbon, honey, vanilla, and dark fruit notes of black cherry and plum bringing up the rear. palate is definitely richer than most of the other Eclipse variants with smooth carbonation and a dry, warming finish. this one just feels more integrated and complex than the other Eclipse’s. my favorite of the bunch. well done.

We did a side by side of 2011 (18 year Elijah Craig barrel)(bottle #317) and 2012 (20 year Elijah Craig barrel)(reserve). The score reflects the 2012 version, both white wax tops. 2011 Version A: Dark Opaque Hue, Passes No Light, Brown Head Ring, Some Lacing S: Vanilla, Bourbon, Mildly Oaked T: Bourbon, Mild Vanilla, Mild Brown Sugar M: Average Carbonation, Medium to Full Bodied, Semi Boozy, Mildly Sweet 2012 Version (barrel reserve) A: Dark Opaque Hue, Passes No Light, Brown Head Ring, Some Lacing S: Mild Bourbon, Mild Vanilla, Mildly Oaked T: Boubon, Vanilla, Mild Brown Sugar, Mild Honey M: Average Carbonation, Medium to Full Bodied, Mildly Sweet, Mildly Boozy Overall, the 2012 was the better of the two bottles, no boozy heat, very smooth and the tastes blended very well, outstanding.

Nose is fantastic, soy sauce and rare red meat. Pours black with a slight brown head. Caramel and maple syrup, subtle bourbon, excellent. Bottle, GBBF 2013, thanks to HarrisonNI (THE KING OF THE PALE ALES) for the forwarding to CGarvieUK

Very dark brown beer.small head. Nice brew. The bourbon comes through just faintly and gives this beer the extra dimension. Good brew for sure.

Bottle shared at mrhangover’s place at his epic Eclipse tasting. Pours very dark brown with a brown head. Aroma is huge vanilla, lots of bourbon, chocolate, toffee, little licorice and little coffee. Smoother than other versions in this tasting. Definitely more chocolate and vanilla. Moderate to heavy sweetness and moderate bitter. Full bodied, soft carbonation and thick texture. Amazing.

Bottle shared @ tasting. Massive thanks to Bytemesis for sending me this. White wax, 2011 vintage. Pours a pitch black beer with a medium sized beige head on top. Aroma has vanilla on top, caramel and toffee, roasted malts and touches of chocolate. Flavor is very sweet with big touches of red fruits, chocolate, massive vanilla and caramel. The boozyness from the other versions has faded in the background which is incredibly nice. Not sure if it’s the age or the different barrel. Doesn’t really matter, this is an incredible beer for sure!
