COMMERCIAL DESCRIPTION
Imperial Eclipse Stout aged in special release Elijah Craig 20 Year Bourbon Barrels

Note from the brewer: The white wax 2011 Eclipse was all 20 year. There was no such brand when we acquired barrels, so we called it 18 year. We have since found out that the 20 year old barrels were dumped for a 20yo Elijah Craig special bottling.

Vintages:
2011 Imperial Eclipse Stout (Elijah Craig 18/20 Year Barrel) = White Wax
2012 Imperial Eclipse Stout (Elijah Craig 20 Year Barrel) = White Wax

Bottle shared @ tasting. Massive thanks to Bytemesis for sending me this. White wax, 2011 vintage. Pours a pitch black beer with a medium sized beige head on top. Aroma has vanilla on top, caramel and toffee, roasted malts and touches of chocolate. Flavor is very sweet with big touches of red fruits, chocolate, massive vanilla and caramel. The boozyness from the other versions has faded in the background which is incredibly nice. Not sure if it’s the age or the different barrel. Doesn’t really matter, this is an incredible beer for sure!

2012 bottle pours just like all the other eclipses I've had: dark, khaki head. Bourbon is muted in nose but displays some chocolate. Mouth adds nut and vanilla. More cocoa. Big creamy body.

Bottle at Mane Liquor Eclipse tasting. 2012 version. Pours dark brown with a sticky tan head. This is definitely one of the best Eclipse’s of the night if not the best. A bouquet of banana, milk chocoalte, oak, vanilla, honey treacle, coconut and woody spice. Great lengthy spice on the finish. An absolute stunner

2011 bottle 4156 thank to billshmeinke alongside a glass of the EC18 Bourbon and a bottle of the 2008 Pappy Van Winkle Eclipse and the 2011 Buffalo Trace Eclipse. Also sampled on tap. Pours with a pitch black body and a lasting tan head with good lace. Aromas are rich, cola, almond, nutty, vanilla, dark fruits, vanilla and fudge. Very rich and decadent. Medium vanillin and oak with rich brown sugar notes. Very refined. Flavors are of vanilla, cola, dates, tannin to balance, fudgy, light smoke, currants. Full bodied and creamy with lasting raisinated flavors. Really, really good! Better than the 2008 Pappy Eclipse at this point. A lot better!

Bottle. Bomber. Split with Sean and Vinnie. Pours deep beige coffee brown with a thin tan head. Aroma of cherries, chocolate, oak, caramel, toffee, and cream. Full, soft body with a boozy, yet velvety, soft mouthfeel. Flavor is heavy chocolate with some bourbon and cherry notes in the finish. Fantastic stout, but only in small doses.

Bottle number 5348. Shared with Amyliz4 and served in a SAVOR wine glass. Pours near-black with a pretty good light mocha head and a surprisingly-large amount of lacing as it goes down. Thin cap recedes a bit quickly and makes way to a thin collar, which holds throughout. The nose brings bourbon first and foremost, but then has a good dosing of coconut and vanilla. Light oak character. Chocolate there as well. Flavor has good oak, coconut, and vanilla in addition to the bourbon. Subtle roast and chocolate in the background. Most everything seems to be coming from the barrel and I won’t complain one bit. Full body and chewy with just a bit of booze. Low-medium carbonation. Great complexity. Absolutely exceptional. Boom.

Tasting at Gourmet Haus during SF Beer Week. Beautiful black. Sweet alcohol with lots of complex chocolate. This was one of my two favorite out of the flight of all 8 from 2011. Glad I have a bottle at home as well.

22 oz. white waxed bottle served in a CBS snifter. 2011 vintage, bottle # 4685. A: Pours a dark black color with a dark tan head forming on the pour. It recedes to a thin ring. Soapy lace is left down the glass. S: Very smooth bourbon, some nice roasted malts, toasted marshmallow and sweet milk chocolate. Very balanced and the barrel is well integrated. T: The taste is pretty similar to the nose. Really nice smooth and semi sweet bourbon. Some milk chocolate with a great barrel presence. Some light oak, but nice vanilla and caramel sweetness. There is a great roasted malt bitterness as well. The finish is nice and sweet. M: Medium bodied with a medium low carbonation. Very creamy mouthfeel with a sweet finish. O: The is definitely the best of Eclipse variants. Great barrel presence and everything is perfectly integrated. Very nice. Serving type: bottle Reviewed on: 10-07-2012
