We took Trifecta, our Belgian-style triple, and aged it in Elijah Craig 12yr whiskey barrels for 6 months. The complex spiciness and mild malt sweetness matured and became more rich as it aged, and the finished product can only be described as delicious.

"This brew starts off too sweet to be really great in barrels but it’s still pretty nice and fairly unique to see this style with the ol Elijah Craig treatment. Honey and tons of vanilla and booze come through, with little of the original Belgian spice and some of the fruit. Definitely a sipper."

Pours a hazy honey/orange with a medium white head. Aroma of spicy apple cider and light whiskey. Flavor follows suit and adds some light oakiness...apple cidery but nit tart or acidic. Mouthfeel is light and the finish is warming whiskey cidery...hot toddy?
