COMMERCIAL DESCRIPTION
The Barrels The individual lots were aged in oak barrels, most of which were hand selected from premium Kentucky spirits producers by Tom Griffin, who is extremely passionate and knowledgeable about bourbon barrels and beer. Each barrel lends its own unique influence to the final blend. Tom continues to hand deliver some real treats to us, including some 20+ year old Rip Van Winkle Barrels! Barrels freshly dumped from the distilleries and hand delivered by Tom Griffin: Rip Van Winkle Bourbon Old Fitzgerald Bourbon / Old Fitzgerald Wheat Whiskey Heaven Hill Bourbon / Heaven Hill Brandy / Heaven Hill Rye Barrels purchased directly from American Coopers toasted to Firestone Walker’s specifications: New American Oak produced by World Cooperage / medium and medium plus toast Retired Firestone Union Oak produced by World Cooperage, and Barrel Associates (water bent staves) The Aging Cellar – The Components Following are descriptions of key components with their original code names: Final Blend % Parabola ྭ% ABV) - Aged in New American oak, bourbon and rye barrels ࿌%) -Russian Imperial Oatmeal Stout (brewed02-09-06 and 01-18-08) OG=28P FG=7.5P IBU=80 Color=Black / Hopped with Simcoe, Bravo, Styrian Golding and East Kent Golding Opal ྫ% ABV) – Aged in rye barrels ྼ%) -Wheat Wine (brewed 2-25-08) OG=22.4P FG=6.2P IBU=45 Color=17 / Brewed with torrified and malted wheat, lightly hopped with Saaz Rufus ྫ% ABV) – Aged in rye and bourbon barrels ྲ%) -Continental Imperial Amber Ale (brewed 8-17-07) OG=22.5 FG=4.5 IBU=40 Color=15 / Brewed with Belgian Dark Candi Syrup / Hopped with Styrian Goldings and Saaz Saucerful of Secrets ƙ% ABV) – Aged in Brandy Barrels ƙ%) -Belgian Strong Ale (brewed 10-30-07) OG=23.4 FG=6.1 IBU 25 Color=39 / Brewed with Belgian Dark Candi sugar and everything else but the kitchen sink Union Jack IPA Ɨ% ABV) - Aged in stainless steel Ƒ%) -American Style IPA (brewed 10-28-08) OG=17 FG=3.5 IBU=75 Color=12 / Brewed with massive amounts of hops and a very kind attitude The Finished Piece- As a finished beer, XII is in some ways more aggressive than any previous blend, but it maintains a great deal of depth and complexity. Everyone seems to get something different when they taste this beer- mocha, tobacco, toasted almonds, olallieberries... I leave the interpretation to you. It is best enjoyed in a half filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing and complex aromas. If left in a cool dark place, I suspect that this beer will age well. Only time will tell. If you find something you like- please contact us and let us know your thoughts. I truly hope you enjoy our third oak-aged blend. This crazy beer journey continues!

Thanks to hoppymeal for sharing this one. Pours a nice mahogany with medium off-white head. Aroma strong of alcohol, bourbon, oak, caramel, chocolate, and vanilla. Flavor comes together nicely and finishes dry. Quite an awesome brew.

March 27, 2016. Bottle, received in a trade with heyta, thanks!
Dark brown with a minimal tan head. Aroma is malty, slight vinous and boozy with caramel, bourbon, vanilla, milk chocolate, dried fruits, warming alcohol, burnt wood and a touch of mint. Taste is sweet, slight boozy and light bitter. Finish is sweet toffee, burnt sugars, some warming alcohol, light spicy, light bitter roasted notes with burnt wood. Medium to full bodied, soft carbonation.
Past its prime but still good.

Bottle courtesy of Hackobock. Pours tiny hazy deep chestnut brown with a small frothy and bubbly beige head that leaves some sparse spotty trace on the glass while dissipating. Smell is malty, nutty and slightly fruity with caramel, toffee, vanilla fudge, charred wood, raisins in rum, plums in brandy, roasted coconut, brazil nuts, leather, sour cherries and bourbon alcohol. Taste is sweet, bitter, malty and nutty. Mouthfeel is soft, round, velvety, tiny astringent, slightly boozy and medium to full bodied. Finish is sweet and bitter with dusty nutty caramel and toffee malts, dark fruits in liquor and woody tannins. Oxidation is prominent and has reached the point where it doesn’t add only ruin the beer. Still, it’s not completely lost on us and is still pretty damn tasty.

22 oz bottle shared with a friend on New Year’s Eve. Pours a very dark mahogany brown color and topped by a very small head of tan colored foam that settles to a few fine bubbles at the edges. Nice drippy legging class the glass. The aroma is really complex and inviting with notes of dark fruit, chocolate, booze, molasses, toffee, burnt caramel, bourbon, oak, and vanilla. The barrels are all integrated perfectly. The flavor follows is big, rich, malty, and boozy with dark fruit, burnt caramel, toffee, molasses, and bourbon all playing a role. Vanilla laden oak comes through and adds depth and balance to all the malts in play. Nearly full bodied, round and slick on the palate with subtle carbonation that leads to a lengthy sweet and warming finish from the alcohol. Supremely well balanced and perfectly blended between all the barrels. World class barrel aged beer from FW and a real pleasure to try.

Bottle bought in Vegas that we amazingly had the restraint to save until our 12th wedding anniversary. Dark brown pour with a thin brown head and little carbonation as expected. Umami soy and molasses in the aroma with some booze. Big booze in the flavor but then finishes with some milk chocolate and espresso. Big and busy but a nice sipper.

Rating 3k at Max’s tasting. The aroma is bourbon, chocolate, molasses. The appearance is deep brown, no head. The flavor is bourbon, chocolate, molasses. The finish is boozy, hot. Medium, a little thin. Nice.

Pours a deep burnt umber color with a finger of khaki foam. Nose has nice roasted malt, chicory, rye, spicy bourbon, burnt pecan, leather, raisin. Palate follows the complexity of the nose. Lots of burnt sugar on the front, a touch of caramel sweetness falls into a big roasted, charred grain with nuances of leather, spicy bourbon and bittersweet cocoa. Silky mouthfeel, lingering layers of complexity.

Faint malty smell. Taste was general malty that wasn’t anything special. Drinkable, but not good.

"2+ year old bottle. Holding up well, though you can tell a little bit of the flavor has faded. super-frikkin smooth, though. smells and tastes predominantly like a barreled stout, but FW makes complex barreled brews better than anyone, and this is no exception, though it is dominated by sweetness and a good dose of roast. i have a feeling my score reflects the age, but even then, still elite! Glad I happened to have a special beer for #2700 :) "
