COMMERCIAL DESCRIPTION
American Wild Red Ale

This liberation begins its journey as DBA then continues through a “chrysalis” process involving 87% French and 13% American Oak barrels, and our proprietary collection of micro flora. To blend, we selected beer matured eight to 24 months in barrels, creating a synergistic beer. Immediately, toasted oak and lemon pith swirl on the nose and palate, followed by an amazing harmony of vanilla, coconut, Earl Grey tea and spice. The finish is crisp, with mouth-watering acidity and chewy tannins. Since we age, blend and bottle these beers once a year, there will be slight variation with each release. A santé!

Appearance: Pours an amber brown with a white ring of head.

Aroma: Sweet tart candy, bready malt, grandmas house.

Taste: Bready malt ,tartness. Vinegar.

Mouthfeel: Medium bodied modest bubbles.

Overall: I’m not the biggest DBA fan, this is slightly more interesting, but not one of my favorite sours they’ve been piloting.

A steady, soft pour produces a three-finger thick, pale tan colored head that slowly grows to fill the rest of my glass and start to peak over (over 6-fingers). The foam has an almost raspberry like fruity taste to it. Tart smelling with an underlying citrus and herbal note, it almost seems hoppy. There is soft funkiness here that suggests at a bit of mustiness, and perhaps a hint of muskiness. There is a hint of nutty, caramelized malt character, though this is quite subtle.

Tart with a soft grapefruit like character, the finish has a crispness to it that is mostly acidity, but also something that is sort of herbal, sort of citrus like in character, and definitely woody / oaky. The body is fairly light, but has a tannic structure to it that makes it stick to the palate just a bit; there is a balancing carbonation that isn’t quite effervescent, but definitely prickly. The oak character plays a big role here, in addition to the wood flavors, there is a hint of vanillin, and some peppery wood notes.

This is a tasty sour, not as complex or funky as a Lambic (my preference in sours), but still quite enjoyable.

Bottle from a trade. It makes sense that the base beer for this is DBA -- it’s a darker, reddish color than most American wild beers, and the extra malts give it a slightly deeper malt and oak flavor. Moderately sour, a little fruity, and full of great funk flavor -- it reminded me a lot of Allagash’s Coolship Resurgam. Really excellent.

Bottle - 375mL corked and caged. Batch No. 002. Bottled 07/15/15. Murky copper with a medium, foamy tan head. Very funky and sour nose. Wet wood, sour fruit, funky yeast, spice notes and wet leather. Taste is surprisingly sweeter than the nose would let on. Sweet fruit notes, wet oak, funky yeast, yogurt, leather, faint vanilla and light spices. Body is medium with a soft carbonation and a light acidic feel. Soft dry feeling on the palate as well. Finishes with more wet oak, funky yeast, yogurt, sour fruit, unripe fruit, sweet malt, light spice and faint vinegar.

Bottle, 2015 vintage. Glowing dull amber color with a bubbly tan head that soon becomes a thin ring. The aroma is vanilla and vinous, some oak. Sour for sure... Tingly bubbles and a lingering tart finish. Some oak and more vinous. Good amount of acidity. Very enjoyable.

Aromas of red berries, limey. Clear burnished gold with a mostly fading white head. Dry, tart, tastes like Smartees. Light-medium bodied.

Draft at Copenhagen Beer Celebration 2014 - Session 3. Pours clear amber-gold with a creamy topping. The aroma holds light tangy berries, a little funk, leather. Light-medium sweet flavour, with nicely balanced sour fruit character, some dried leather, musty dankness. Medium in body with average carbonation. Nice and clean on the finish, with further dried, tangy and leathery fruits. Very solid.

Draught@CBC2015. Clear amber colour with a small off-white head. Aroma is red wine, mild sour wooden notes, sweet ripe fruity notes as well as some plum. Flavour is quite similar, with both the sweetness and sourness being quite intense. Interesting balance between the sweet and sour.

This bottle labeled as 6.8% abv, 85% French oak and 15% American oak, matured 8-36 months. Pours a hazy golden red from the cork and cage with fluffy off-white head that leaves moderate lace. Aroma of funky brett, lactic acidity, and sweet berry notes. Taste follows, more of the funk and acidity than the fruitiness. Lingering acidity, but not over the top, bubbly carbonation, dry finish. Really nice, firestone delivers again!

On tap at the Backcountry Pizza anniversary party. Clear orange color, with a small, beige head. The nose is orange juice, riesling, caramel, toffee, and juniper. Sweet, with a sharp, pleasant tartness. Medium body, sharp, creamy, and thick. This is an assertive sour, but with great balance. A lovely mix of unique aromas, with a strong, pleasant sour flavor. Just delicious.
