COMMERCIAL DESCRIPTION
Saison aged for 14 months in French (75%) and American (25%) oak barrels with Brettanomyces lambicus and Lactobacillus brevis.

Aroma: Immediately youíre hit with barnyard funk and earthiness, then hay, light vanilla, and american oak follow, and lastly you get a nice tart, vinegary smell from the french oak mixed with very light white grape notes, the grape notes come and go. Great complexion in the smell, and it smells very good! Appearance: I love the appearance of this beer, saisons are normally this bright cloudy yellow color but this beer is clear, and the color is very golden with a slight yellow hue to it, on the pour there is a tiny appearance of a head but it bubbles franticly and disappears very quickly, nice nucleation as well. Excellent appearance to this beer. Taste: The beginning you get funk, hay, earthiness, and a calm sour/tartness, the middle you get a hint of vanilla, and american oak, and the ending you get a slight vinegary flavor, french oak becomes apparent, slight white grape winey flavor, a hint of vanilla again, and the sourness lingers all the way to the finish but it constantly reduces from the beginning to the end. This is a superb tasting Saison! Palate: Very light, crisp, and refreshing, perfect for a hot day(it was 104 today and this hit the spot!), slightly oily, leaves your mouth a little dry, but that only leaves you begging for more and itís a great thing it does! O: This is an incredible saison, the best Iíve had so far and itís going to take a lot to dethrone that status, I highly recommend this beer!

Gold pour with a white head. This is a very oaky and tart saison. Not overly sour but the oak is the star. Has a lot of flavors similar to Feral One...just less sour. Really really good.

Hazy yellow orange in color... Aroma of citrus, spices, tartness... Flavor is moderately sour with nice citrus backbone, notes of spices, grains, wine oak on finish... Amazingly good, wish I had 5 more... One of my favorites from FW ---Rated via Beer Buddy for iPhone

A nice Belgian light spice to the aroma. The flavor on this one is great. A bit of spice and hops throughout, this one was pretty tasty.

A juicy, delicious, complex, but incredibly drinkable beer. Peach and apricot character combine nicely with mild funk and grass, a little bit of oak, and some citrus zest. Somewhat dry.

Hazy orange amber pour at Good Dog during a FW event. Much brighter and sharper than the original "Opal" and more thirst-quenching. Dark amber fruits. Yellow plums. Tangerines. Heart of palm. Key lime pie. Mango skin. Passionfruit. Bamboo. Nice tinge of sour. Lots of drying oak tannins. Like a lot!

My Bottom Line:
Citrus fruit splashes and air-filled haystacks whip up a tart and refreshing Wild Saison.

Further Personal Perceptions:
-A sheet of foam covers the hazy blond.
-The flavor intensity isnít through the roof, which I appreciate.
-Citrus fruitiness is redolent of starfruit and lemon.
-Drinkability is extremely high.

Bottle thanks to Ontape ! Pours a ripe golden color with two fingers of white foam. Nose is really inviting... rustic grain,stonefruit, tart lemon, straw a bit of spicy oak and citrus pith. Palate follows with nice lively carbonation that works with the heavy oak undertones to create a round mouthfeel with tiny bubbles scrubbing the flavors from front to back. Nice rustic fieldgrass and straw, dusty oak, lacto and mysterious foggy vinous fruit.

UPDATED: FEB 16, 2014 Tap at Sacramento Brewing Company. Hazy golden color with a foamy white head. Definite aromas of sour and fruit. Full bodied with mild carbonation. Flavor is mildly Bretty with light stone fruit. Really rather peachy. Finish has a metallic note, but mild funk is the key note. Laced a bit. Very refreshing. Compares more than favorably to Ommegang Bier de Mars. Love saisons.

From the bottle, pale yellow, quickly dissipating head. Aroma is funky and fruity, taste has wine notes, fruity and a nice dry finish.
