Draft. This is certainly aggressive. Aroma is pretty fantastic, lovely bourbon barrel and dark chocolate. Flavor seems a little under attenuated though that becomes a bit annoying trying to drink more than a sip or two of this, supper rich, syrupy, doesnít seem like it got to 13%, marshmallowy, strong bourbon, a lovely flavor that is well proportioned just amped up way too much. Body is low carbonation and thick. Again Iím thinking under attenuated. This is a quality beer, and I have no doubt in years previous it was outstanding... this just seems unfinished to me from this serving.

3.9 AROMA 8/10 APPEARANCE 4/5 TASTE 6/10 PALATE 5/5 OVERALL 16/20
Pours a solid black with a creamy fluffy coffee colored head that sticks around for a bit. Smells of coffee, chocolate, licorice, with hints of vanilla, oak, sweet bourbon and alcohol. Thick like maple syrup body has a creamy smooth mouthfeel and a light level of carbonation. Wow this one has some residual sugars thatís for sure. Taste starts out with licorice and chocolate but they are assaulted with bourbon, vanilla and oak very quickly. Coffee and chocolate step in but disappear as the whole thing turns into an oddly dry finish. Long lingering alcohol heat and earthy hop bite rolled in roasted grains. This is a big beer that is tasty. I find it a bit hot in the finish, Iím curious to see what a little age does to this one.

Sampled from bottle at PIB, pours solid black with a thin, dissipating caramel head. Aroma of coffee, roasted malts and wood. Flavour of espresso, roasted malts, bourbon and wood. Fine carbonation, full-bodied, warming and complex.

4.5 AROMA 9/10 APPEARANCE 5/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20
On tap at beachwood. Dark opaque black with creamy light brown head that settles slowly. Vanilla, oak, bourbon, chocolate, roasted malt, and bit of coffee. Unbelievably smooth and creamy, well carbonated, starts sweet with a hint of bitterness and bourbon, great long finish with a balanced bourbon ending that keeps on going. What a great beer. Seek this one out.

UPDATED: MAR 18, 2012 One fantastic beer. I start to get a little tired of huge barrel aged monsters but when you do it right it can be incredible. This one looks like a stout so that covers the appearance. Taste and aroma are one in the same. Great bourbon, vanilla, oak, flavors from the barrel aging compliment a really rich roasty lightly sweet stout. Smooth and outstanding. Im glad there are 2 more in the cellar.

Brown bread, peppercorns, vanilla extract, rotten apples and roasty burnt toffee are the aromas. Full coating slick body that leaves a lingering ethanol kick. Flavor less potent than aroma but with only the toffee and cocoa nib components.

Sampled at an ESBLS tasting. Wow! What a delicious aroma! Molasses, coffee, chocolate, raisins. The flavor matches. So good. This was had side by side with a Bourbon County Stout. The BCS wins but the Parabola was delicious!
