Our first foray into the funky world of lambic style beers. These traditional Belgian style ales are exposed to both wild yeast and bacteria, as well as the addition of fruit, during the secondary fermentation. Ours began back in 2010, with the blend of two wheat ales and inoculated with Brettanomyces Lambicus, Brettanomyces Bruxellensis and lactobacillus. We then added ollalieberries—no, that’s not a typo—and waited patiently for two years! The result is amazing: a distinctively, dry, cidery, fruity, vinuous and oh-so sour beer. Bracing and refreshing.

"Sooooooo happy everyone and their mother seems to be making a sour these days. We’s started with the bretty DDBA, which was nice, but this Vinny-approved monster shows you just what an extra bug or two and two years in oak can do. Hell, the aroma was mouth puckering! But oh so pleasant. Subtle oak, very tart flavor...lemons, musty, a little fruit to sweeten the pot. Very well done."

From notes, consumed on 3/25/13 at ChurchKey during CBC Week. Draft poured into a tasting snifter. Pours a honey brown color with off-white head. Aromas of sour grapes, tart fruit, red wine, vinegar, oak. Tasting notes of sour grapes, tart notes, sour fruit, oak.

On tap at Brouwer’s cafe sour fest. Pours a slightly hazy orangish red color with a small white head that leaves light lacing. Smells of berries, brett, vanilla, and oak.. Mouthfeel is pretty light and smooth for a sour and finishes dry. This was my first Lambic and is have to admit it was really interesting but great. I like what Frestone Walker is doing with their Barrelworks program. It was cool to hear from the brewer on how their barrel program came about and all the process and time it takes to make a barrel aged beer.

Tap @ Barrelworks. Murky golden copper pour with a slick of white foam. Aroma is light funk, tart, green apple and some gueuze-type features. Taste is tart and funky with lemon and apple and a bit of sour. Clean, crisp mouthfeel. Very enjoyable sour/wild ale.

Tap. Pours hazy amber, small white head, some lacing. Aroma is funk, lemon, wine, fruity. Flavor is the same, light sweet, medium tart, light funk, dry finish. Medium body, champagne-like mouthfeel. Very nice complex sour beer.

Sampled at Churchkey during CBC week. Pours a hazy, pink grapefruit color with one ring of white head. Nose is classic lambic, funky, tart, grapefruit, sweat, sweet tarts, berry, rhubarb, a little dusty. Flavor is well balanced, wood shavings, berries, tart blood oranges, light cheese, funk. Medium bodied, dry, tart finish. Really nice.

Bright orange-amber with unsubtle oaky nose along with lemon and blackberry pulp. Lively beer with a juicy, broadly fruity tartness. Has that American-sour-tang of residual malt that just barely holds it back from being very lambic-like. Does fine on its own and grows on me with each sip.

Tap at Churchkey. Low haze orange pour, medium thicker white foam. Spotty lace. Really nice funky peach nose, small grapefruit, white grape, berries. Taste is leathery, lactic, effervescent palate. Dry, just a tad bland in the finish. Spicy acetic hints.

2 Year aged Lambic with Ollalieberries. Pours clear reddish/orangewith a huge amount of fizzy head that quickly faded as it settled. The aroma was mildly acidic, with huge amount of musty berries, slight vanilla and oak along with brett. Up front taste was extremely sour that made your cheeks pucker up quite a bit. The sourness settled out however and did not have quite the punch after a few sips. Very fruity finish with a bready after taste, some light "dusty" or maybe "chalky" qualities. Lots of wine character mixing with the fruit as well. A really well executed sour from Firestone Walker. I tried this beer once before during San Luis Obispo’s Sour Fest May 2012. Don’t recall a fruit taste at all in the beer... I like it a lot better now given some time. Well done!
