Aged in casks formerly used for Cabernet wine, this big Imperial Stout is brewed from Northwest ESB, chocolate, and caramel malts, with Columbus hops to bitter and Cascade hops for flavor.

Batch #3 (2001). Dark brown with a good brown head. Aroma is liquorice, chocolate, dark fruits. Sticky mouthfeel, bittersweet on the palate with a hint of umami on the finish. Taste is anise, chocolate, raisins, prunes. Yum.

Bottle share taster. 2001. Super black with an everlasting, creamy, tan cap. WTF?! Aroma of raisin, chocolate, licorice, bourbon. Taste is sweet, and chased with a good sticky, dry mouth.

Thanks to thirdeye11 for sharing this bottle. 2002 vintage. Black pour with a tan head. The aroma has a lot of chocolate and roasted malt. The flavor is similar with a few additions. I get some chocolate and roasted malt notes as well as some dark fruit, red wine, oak and alcohol. Thick mouthfeel and low carbonation. Great beer.

(750ml bottle 2002 vintage) deep espresso brown, creamy dark tan head. Nose of cabernet, light oxidation, cream, oats, moss, oak, esters, honey, rich chocolate, candied orange peel. Taste is roasty, candied orange, sweet, cabernet barrel, grape, rich chocolate, exceptionally unique beer, never had one like it.

Unmistakeable oranges. Deeply roasted, lightly fruity booze character, barrels impart unique complexity. Quite interesting and delicious.

750 ml green bottle. Batch #2, vintage 2000. So my brother has had this beer [along with Batch #1, vintage 1999 and Batch #1 and 2 of Leviathan] in his fluctuating temperature garage for over ten years. A few years ago, we decided to start cellaring it at a normal temp. We had nothing better to do tonight, so we decided to rate them. Poseidon pours opaque black with a long-sustaining tan head. Aroma is woody, wine grapes, toasted coconut. Taste is sweet and a little sour (from the wine grapes, maybe?); finishes with a tannic bitterness. Nice creamy mouthfeel, fairly soft carbonation. To be honest, I was expecting a piece of shit! It definitely wasnít cellared properly for most of its life. What a nice surprise. This was really tasty.

750 ml. bottle, batch #2 2000 vintage- Pours pitch black with a surprisingly one inch mocha colored head. Aroma is totally wine grapes, oak and chocolate. Taste is oak, chocolate and wine grapes again, very good for itís age, in fact close to excellent. Body is full and carbonation is average. I can not believe how this beer has aged, wonderful. I didnít even age this properly, before my Ratebeer days I wasnít in the know on how to store beer, so it stayed in my garage, temperature fluctuation from season to season, I have a bottle of batch #1 of this beer, not sure whether to drink it or sell it!

Huge thanks to 50belair for providing this bottle. Thanks Matt! What an amazing imperial stout for being 12 years old. Big wine notes mix with deep rich chocolate. Great mouth feel. Just an absolute pleasure to drink.

Bottle, batch 3. Decadent vinous chocolatey aromas. Dark brown pour with a light brown head. The cabernet has really taken over the show. Red wine, oak, milk chocolate and mild roasted malt notes. Very good mouthfeel and body. Fantastic balance. The red wine and chocolate are a delicious combination. I canít believe this beer is 12 years old and is this impressive. Not having had it before I am intrigued as to whether or not itís better or worse. I have heard that some of the batches have not held up well. Perhaps itís a tribute to the way my friend in Washington cellars his beers...

Thanks bucketboy for bringing this one out. Never even heard of this before tonight but glad we were introduced Appearance- black with a quarter inch of tan head Nose- roasted nuts, cherry wood,cocoa powder Taste- wow....huge roasted flavor of almond,walnuts covered in chocolate, taste of dark fruit is suttle. Slightly vineous with bitter after taste. Reduced grape reduction with warm caramel on top Ridiculous
