COMMERCIAL DESCRIPTION
Aged in casks formerly used for Cabernet wine, this big Imperial Stout is brewed from Northwest ESB, chocolate, and caramel malts, with Columbus hops to bitter and Cascade hops for flavor.

Big thanks to footbalm for this. Pours jet black with 2-finger khaki head. Aroma of malt, chocolate, dark fruit (cherries), licorice, prunes, cognac. Tastes roasty malty, extremely dark fruity, with a big cherry element at the finish, along with hcocolate and some soy sauce. Smooth, dense palate. Well hidden alcohol. To me, this one is 1 part GD Yeti, 1 part Weyerbacher Raspy Impy, and 1 part Stone RIS. All parts are delicious.

Thanks to matt for this version 3 2001 vintage... he kicks all forms of ass, mamal, amphibean, marcupial, fish, bird, bug, them all. poured a huge thick dark black w/ a big thick creamy dark brown/tan head. Smells incredible a big casky cabernet malty smell a touch of something fruity and hints of alcohol. Palate is big rich and creamy coats well nice and thick. a sweet sherry flavored beer w/ some great dry hop beautiful carmel/coffee malt and some great sweet finish hints of a dry chocolate. Oh man is this stuff good..

NUMBER 100: Deep dark brown. Many aromas pour out of this beer. Where to begin. First, this had a thick tan colored head. A thick aroma of wine flavors. Grapes. Spices were very heavy. Can tell the age from this beer. First impression from the taste was grapes. Very wine like brew. Tangy, slight bitter front. Coffee was really present in this beer. Very delicious! Thanks to Büch Dich and Sham for picking this one out for my 100th beer rating. Cheers!

750ml bottle received via trade with the very generous alanc! - Thanks! - Pours black with a nice milkshake like tan head that stays pretty well and laces some. Good chocolate and dark fruit aroma with not much oxidation at all for the age of this. A touch of oak there too. Flavor is good chocolate and dark fruits as well but some oak found underneath and some roasted and burnt malts. Palate is very smooth and creamy but you are left wtih quite a dry finish. Pretty amazing brew overall and I’m glad I was able to share it with some new friends.

Bottle, Batch 4 (Nov. 2002), kindly shared by David! Poured black with a tall, deep, well-retained dark brown head.. just lovely!, with intricate lacing following it down. The aroma was of rich dark chocolates delicately intertwined with darker grapes.. some sherry was also present, and the oak made itself known.. the vinous presence was greater than anticipated, but was fantastic!

The flavor was also rich, with well-roasted darker chocolates and heavy vinous notes at the core.. sherry and increasing vinous notes ride out the roasty finish with drier chocolates and cocoa.. this was like candy to me! The body was not much heftier than medium-bodied, but filled out a bit as the drink progressed.. great roast and barrel influence!.. creamy middle balanced well with sour oaky accents. Brilliant!

Bottle aged very well this was great and better then the original as the barrel aged made it more smoother,with hints of smoke and malts and tasted sorta like a stone RIS .poured a nice dark black and had a nice hop taste to it still.CHEERS!

UPDATED: JUN 3, 2008 Same batch, just in 2008 as previous rating. Huge thank’s Old_Mr_Crow! Again, a 2002 bottling of their BA Poseidon. Great body with a thick black color and a nice, thick brown head. Aroma is slightly chocolate based with a hit of caramel, some hops are evident along with a nice spice that I can’t name. Taste is of dark cherry’s with a nice light ending of dark fruit. Overall, more outstanding than I’d hoped.

Big thanks to Old_Mr_Crow for getting this too me. Sampled at the 1st Richmond Beer Industry Gathering of ’06. Pure black body with a nice brown head. Caramel, chocolate malt aroma. Warm taste, sweet with dark chocolate and cherry. 8/5/9/4/17 = 4.3

750mL bottle, bottled Nov. 2001 cellar’d in Bottleworks’ cellar since, split with manuchampions, Matts_Property and uhlan. Pours pitch black with a small light brown head - looks beautiful. First sniff reveals a perfectly kept beer, especially for the age (over 10 years!), with notes of rich roasted malt, maraschino cherries, cabernet red wine, almost a bacon / smoke note, light molasses and many other subtle complexities I cannot find words for. Flavour is immensely rich and complex - hasn’t gone off at all - with roasted malt, red wine, slight smokiness, maraschino cherries, vanilla, light molasses, etc. etc... so many layers of depth and complexity. A bit port-like on the finish, especially as it warms up. Glad to have had the opportunity to try this, despite the hefty price tag. Too bad Fish Tale does not brew this anymore. Amazing beer.

Bottle, batch 3. Decadent vinous chocolatey aromas. Dark brown pour with a light brown head. The cabernet has really taken over the show. Red wine, oak, milk chocolate and mild roasted malt notes. Very good mouthfeel and body. Fantastic balance. The red wine and chocolate are a delicious combination. I can’t believe this beer is 12 years old and is this impressive. Not having had it before I am intrigued as to whether or not it’s better or worse. I have heard that some of the batches have not held up well. Perhaps it’s a tribute to the way my friend in Washington cellars his beers...

Bottle. Pours solid black, with a gorgeous tan head. Aroma of roasted malts, toasted nuts, cherries, dark fruits, booze and chocolate. Flavours as above, including smoke, peat-like qualities, wood, iodine and port. Nicely balanced, lots of flavours, nothing dominates. Dry, gorgeous, better warmer.
