COMMERCIAL DESCRIPTION
Swordfish Double Cascadian Dark Ale (CDA) is dark in color, with a prominent “Northwest” hoppy aroma – citrusy, piney and resinous – with sweet malt, hints of roastiness and toasted malt. The flavors strike a beautiful balance between citrusy Northwest hops and, to a lesser degree, roasted, chocolate malt or caramel notes. Despite it’s rich color, the body is more reminiscent of an India Pale Ale, not heavy like a porter or stout. It takes the very deft hands of our Fish brewers to make these flavors play well together so that they don’t fight one another. But as you’ll see with Swordfish CDA, when that perfect balance is struck, something sublime happens; the result becomes more than the sum of its parts and you’ll finally taste what makes a Casdadian Dark Ale so special. Available April 1st – June 30th in 22oz bottles & draft

22oz bomber pours into a big fat squat Sierra Nevada tulip with a clear deep dark amber body that supports ruby red and infra red hues while holding up a tight yet loose looking mocha colored head of foam and then dissipating into a ring and an island of bubbles. The aroma offers up chocolate mixed with a light degree of pine hops and then sliding into a faint dark roasted coffee bean note. A few more pulls and the chocolate reveals a more earthy side to it initially and then heading into dark chocolate toward the end of the draw. As it warms I start to pick up muddled blunted earthy citrus hops. The taste begins with notes of chocolate, some pine hops, some mild citrus and bits of dark roasted coffee. Toward midway pine hop flavor bumps up a bit as dark roasted malts nudge their way forward. I get a dash of dank earthy hops into the finish just as the dark roasted to nearly burnt malts create a little bit bigger footprint. The hops could be a bit bigger but I’m likin’ this.

Bottle date: unk A: pours a black ale with limited transparency. A two finger head of mocha head sticks around for quite some time, finally retiring to a thick quilt of the same. Rope lacing. S: lots of malt up front, dry roasted malts, some resiny hops. Honestly not a whole lot up front here. T: The hops are subdued and make this taste more like a well crafted stout with some extra hops. The hops are piny and resiny, but then as I taste the hops, the malts come back through to own this one, nutty and chocolaty, the malts are a bit overdone for the style IMO. M: Medium body with a creamy feeling, the carb is moderate to lo. Dry finish. O: This is a decent shot at a newer style. I don’t think it’s quite well done provided the lack of hop exploration here. Worth a try, but not something I will pick up again. Serving type: bottle 07-01-2011

Bottle, 22oz. It pours a dense, two-finger beige head over an unclear reddish brown body. The aroma has a nice hoppy touch, orange peel and pine cones, with roasted malt notes, chocolate and some coffee. It’s quite bitter in the mouth, full-bodied and faintly warming, with a pleasant carbonation level. Chocolate, roasted malt notes, pine cones and citrus peel flavors, finishing quite bitter and with roasted malts and chocolate. Pleasant one, bet it’s even better just out of the brewery. 131123

Bottle @ Scooper Tasting in Ulfborg. Pours slightly hazy very dark brown with small tan head. Complex aroma of hops, malt, and coffee, with notes of chocolate. Bitter, hoppy flavour, with touches of roast and notes of fruit, citrus, and coffee. Well hidden ABV. Bitter finish. Nice.

Pours clear brown with a off-white head. Aroma has notes of roasted malt, chocolate, citrus and grape. Taste is medium sweet and medium bitter with a long chocolate and citrus fruity finish. Body is medium, texture is oily, carbonation is soft.

Ulfborg weekend celebration of nothing in particular. Dark chestnut colour with a small off-white head. Roasted malt aroma with chocolate and caramel, and a hint of citrus. Sweet and full bodies roasted flavour with licorice and ashy notes. A bit of citrus hops, and a rather bitter finish

Bottle @ fonefan tasting. Nice head with good duration. Color is dark brown. Aroma and taste are roast malt, rich hops, flowers, caramel, lactose sugar and has a nice bitter finish.
