COMMERCIAL DESCRIPTION
Swordfish Double Cascadian Dark Ale (CDA) is dark in color, with a prominent “Northwest” hoppy aroma – citrusy, piney and resinous – with sweet malt, hints of roastiness and toasted malt. The flavors strike a beautiful balance between citrusy Northwest hops and, to a lesser degree, roasted, chocolate malt or caramel notes. Despite it’s rich color, the body is more reminiscent of an India Pale Ale, not heavy like a porter or stout. It takes the very deft hands of our Fish brewers to make these flavors play well together so that they don’t fight one another. But as you’ll see with Swordfish CDA, when that perfect balance is struck, something sublime happens; the result becomes more than the sum of its parts and you’ll finally taste what makes a Casdadian Dark Ale so special. Available April 1st – June 30th in 22oz bottles & draft

Very good beer! Poured at a good temperature with a nice, fluffy, foamy, tan head that slowly settled down and some lace. Color is a clear garnet. Aroma is hop, malt, roast, fruit. Flavor’s like nose; fairly dry, bitter and carbonic tang up front, with the bit of malt/fruity sweet in back. Body and carbonation good, although there’s a little astringency in the finish. Also the finish is quite long, boozy, and resinous.

Pours black with a creamy tan head. Aroma of roasted malt, pine, and caramel. Roasted malt, chocolate, caramel, and a slight hop bite. Creamy with excellent lacing. Really good!

Mahogany pour with hints of chestnut and onyx, a nice khaki head. Dark malt, pine, candied citrus, caramel, toffee, and honey. Solid and drinkable but wish the hops were a bit more pronounced and stood out against the malt profile. Good but not Wookey Jack.

Bottle; very nice looking pour, blackish with a ligther brown head of decent size. Nice, balanced aroma; lots of nice pine, earth, fruit, caramel, and roasted malt. A touch of sweetness. Nice aroma. Flavor preferred balance, subtle complexity to aggressive, over the top flavors. Subtle flavors of roasted malt and earth, chocolate and pine, with some caramel. Surprisingly drinkable.

22 ounce bottle into tulip glass, bottled in March 2012. Pours a fairly pitch black color with a nice 2 finger dense khaki head with great retention, that reduces to a nice cap that lingers. Some good spotty lacing clings to the glass. Aromas of grapefruit, pine, roasted malt, biscuit, nuttiness, cocoa, orange, herbal, and floral. Very nice aromas with good balance and complexity. Taste of grapefruit, roasted malt, pine, orange zest, herbal, floral, biscuit, char, grass, nuttiness, and cocoa. Good amount of piney bitterness on the finish; with lingering notes of citrus, roasted malt, pine, biscuit, char, herbal, and grass on the finish for a good bit. Great balance and complexity of all flavors; with very balanced roasted/hop flavors which I really like. No cloying flavors at all after the finish. Medium carbonation and body; with a creamy, slick, and lightly sticky mouthfeel that is very nice. Alcohol is very well hidden with almost zero warming noticed after the finish. Overall this is an very excellent Black IPA. Great balance and complexity of flavors; very good malt balance and very smooth to sip on. Highly enjoyable offering.

Pours a very dark brown with a big tan head and a lot of lacing. Nose of citrus and flowers. Full body and a smooth cream mouthfeel. The flavor is roasted malts with chocolate, and and long hop finish with bitterness. A really well crafted Black IPA.

22oz bottle: Pours a barely transparent dark mahogany with a stringy-lacing off-white head. Has a fresh piny hoppy nose with some sweet toasty dark malts. Starts with pretty good fullness and light caramel sweetness with assertive resiny hop flavor and bitter balance before a drier bittersweet finish. True to style and enjoyable.

Bomber Bottle. Pours a dark brown with a thin tan head. Malty aroma, sweet, kinda roasted, smells like an english brown. Taste: Malty, sweetish, with a mild to moderate hop bitterness, notes of citrus. Warming mouthfeel. Finishes with a grassy sweet bitterness, lots of roasted malt going on here. Good complexity here... quite good....

pours a deep dark brown with a red tint, a small khaki head, and good lacing. smell is very complex, malt, pine, hops, a touch of citrus, caramel, prunes, and some grapefruit. taste is thick, hoppy, dark fruits, roasted malt, caramel, and a touch of grapefruit. ends nicely bitter.
