COMMERCIAL DESCRIPTION
Swordfish Double Cascadian Dark Ale (CDA) is dark in color, with a prominent “Northwest” hoppy aroma – citrusy, piney and resinous – with sweet malt, hints of roastiness and toasted malt. The flavors strike a beautiful balance between citrusy Northwest hops and, to a lesser degree, roasted, chocolate malt or caramel notes. Despite it’s rich color, the body is more reminiscent of an India Pale Ale, not heavy like a porter or stout. It takes the very deft hands of our Fish brewers to make these flavors play well together so that they don’t fight one another. But as you’ll see with Swordfish CDA, when that perfect balance is struck, something sublime happens; the result becomes more than the sum of its parts and you’ll finally taste what makes a Casdadian Dark Ale so special. Available April 1st – June 30th in 22oz bottles & draft

22 oz. bottle, split with Matts_Property, pours dark brown / black with a reddish hue and small tan head. Aroma of rich roasted malt, espresso and potent hops. Flavour begins with caramel malt, roasted flavours and dark fruits, finishing with citrus hops and tropical fruits. Very solid.

In short: A nice dark IPA (not quite a Black IPA) with green/herbal hops profile. Superior example of the style
How: Bottle 22oz. Consumed very fresh a little over one month after the first rating.
The look: Dark mahogany body topped by a medium beige head
In long: The hoppy (but not so hoppy) nose is very green and herbal with some citrus fruits. Taste starts with a nice semi-sweet and slightly nutty toasted malt backbone that reminded me of fresh brownies. A bit lactic with milk chocolate notes. Bitterness intensity is only medium but it is very herbal and very green with notes grapefruits. There seems to be a lot of alpha acid in there but somehow the beer is rather smooth. Nice malt-hops harmony. I could drink a lot of this beer despite the Surgeon General warnings on the bottle but I pay as much attention to it as I do to the recommended serving size printed on my extra-jumbo bag of potato chips.

22oz bottle: Pours a barely transparent dark mahogany with a stringy-lacing off-white head. Has a fresh piny hoppy nose with some sweet toasty dark malts. Starts with pretty good fullness and light caramel sweetness with assertive resiny hop flavor and bitter balance before a drier bittersweet finish. True to style and enjoyable.

Bottle shared at Sander’s place in NYC. Pours deep brown with a creamy beige head. Nose has some burnt and dry pine, a bit of pine, cocoa. Medium sweet with lots of dry chocolate, some toasty pine, light earth. Medium bodied with fine, creamy carbonation. Mellow roast fin, more toasty pine, dry grapefruit. Pretty darn tasty.

On tap at Lunar Brewing Co., and snifter served with an opague, black/brown color, frothy, brownish tan head foam, and draping lace. The aroma was roasty, oaky/woody, a touch of cocoa, subtle citrus, and a bit of tartness. The taste was similar notes, with a medium+ body, and an assertive, dry, earthy, resiny hop bitterness that possessed a lingering nature, but no harshness, and smoothed a bit more by some light creaminess to the mouthfeel. No noticeable sweetness thoughout, with fairly disguised alcohol presence. A tasty, robust brew.

Bottle @ fonefan tasting. Nice head with good duration. Color is dark brown. Aroma and taste are roast malt, rich hops, flowers, caramel, lactose sugar and has a nice bitter finish.

Bottle. Very dark brown with small beige head. Aroma is roasted malts, chocolate, hops, little dusty and a little grapefruit. Flavour is roasted malts, chocolate, coffee, hops, little grapefruit, little sweet, pine and medium bitter.

On tap at the brew pub. Very nice high body black IPA that had a great balance of malt and hops. Great beer.
