COMMERCIAL DESCRIPTION
This beer is our version of a very unique Belgian beer style brewed only in the Lambic region outside Brussels.

We brewed this beer over 5 years ago. The first step was adding wild yeast. We did this at the warehouse in an oak barrel. We pitched wild yeast and one case of cherry lambic I brewed in San Francisco in 1992. This added enough wild yeast to start fermentation. (This beer was brewed totally off-site to make sure we did not infect our on-site beers).

Fermentation started slowly, after about 6 months it was going strong. We allowed the beer to ferment in the barrel for almost 3 years. We then moved to another barrel and added Raspberries. Another fermentation took place. This very rare and special beer is 5 years old. Strong notes of lactic, bitter sour aroma will come through with a very tart flavor balanced slightly by the fruit.

This beer was awarded a bronze medal in the wild beer category at the Festival of Barrel Aged Beers last month. We will not be filling any growlers of this unique framboise although, we will release about 150 corked bottles later this winter.

750mL bottle at Woodshop 5.0, #27/90, courtesy of WeeHeavySD. Thanks, Jon! Pours a very murky and muddy pink-tinged brown; thin head that soon departs. Very pulpy, fruity aroma of tart strawberries and cherries; lots of funk and pittiness; really nice. Medium body: lots of funky red fruits, strawberries; lightly tannic with tart lemons and intense citrus; pulpy and hints of wheat; medium acidity; lovely. Lasting tart finish of strawberry, cherry pits and light tannins.

Pour out of bottle at Winterfest 2012, nice pink-almost reddish pour with thin slightly off white head. Aroma hits you in the face with big, big raspberry, including the seeds and plant portions, with nice big funky notes with horseblanket and some basement, hints of lemon from the lactic but overall a nice big sour aroma. Taste lets down just a touch, with hints of funk and nice lactic notes but not over the top, some nice raspberry that is more restrained. Overall, well crafted.

Big thanks to Dan for this one. Appearance is great as is the nose. Very big raspberry and funk going on here. There barrel did this beer well. Taste is a little off putting very tart/dank but I taste a bit of cork in the flavor. I am enjoying this one though. Not sure if that cork flavor is because this beer is a little young (in the bottle) or if there was a problem with the corks they used. Regardless I think this is special and am happy to have experienced this beer. Merry Christmas!

Minnesota Winterfest 2012. Red/pinkish color with a small head. Strong raspberry aroma. More monster raspberry flavor. Moderately sweet, but quite tart. Not much of the underlying beer comes through, but the berry flavor is just delicious.

Tap. Clear dark red/pink pour, nice tart cherry nose. Flavor was just as good as the nose, plenty of fruit, decent amount of sourness and finished very clean.

Poured on tap at Fitger’s into a 10oz snifter. A. Pours a dark redish orange, nice 3mm white head, maintains thickness for minutes afterwards with very nice lacing. S. Smells of sweet tart cherries, raspberries, slight bread and a wonderfull tartness. T. Tastes of sweet raspberries, tart cherries, and a bit of sour grapefruit with a hint of orange. M. Medium body, smooth with a medium heavy carbonation, mildly chewy, with a wet tingly finish. O. A very good beer, lots of depth, lots of flavor. I feel like in a few years this beer would pop and be just amazing. A little time to mellow and change. A very good beer. I can’t wait to crack one of the bottles I picked up.

[On-tap at Fitgers] Pours reddish-brown with a small white head. Aroma is really nice--loads of fresh raspberry, not artificial or candyish. Acidic, with light wheat. Taste has fresh raspberry, good sourness, really no funkiness to speak of, just acidity. Lots of wheat at the end, with some diacetyl showing through after awhile. The butter is not very appealing. Medium mouthfeel, with a decent length finish. Overall, fairly simple, with just a lot of acidity. That alone is not necessarily a bad thing, but the butter is disappointing. Also, this is not worth the price ($10 for 10oz pour, or $27 for bottle).

First beer of FoBAB, 2011. A little frothy, but a nice dark pink color with amber. Not very sweet, lactic, and not very acetic. Some skin-like flavors, lip-smacking. Would love to drink more than 3 oz.

Sampled on tap at FoBAB 2011 (Chicago, IL). Pours a nice glowing copper hue with a touch of pink. A small loose whitish pink head sits atop, with small lacing. Aromas are raspberries, dry and tannin with touches of lactic acid, bretty hay, dried out with oaky touches. Gentle yet there. Initial is lighter end of medium bodied offering raspberry puree, a touch tart moving into a decent lactic acid, lemons and sour berry. Touches of dry bretty funk, oak, and some juiciness. Middle and finishd ry out more, lactic and a touch of dry brett mix with oak, more touches of fruit. Fairly dry and lactic/bretty finish. Nice.

draft... I had high hopes for this sour but it missed the mark, generic American yeast the fruit is muddled and lost
