COMMERCIAL DESCRIPTION
The newest vintage cider from Flag Hill Farm. It is made in the Belgian style, undergoing malolactic fermentation and with the lees still in the bottle. The result is an extra-dry, lightly sparkling cidert that is certified organic. Sebastian Lousada and Sabra Ewing make this cider from dozens of different apple varieties grown in their own orchard, as well as from wild-gathered fruit.

Bottle brought back from Vermont by a friend. This is a very interesting French-style cider, a style that is very rarely brewed in the US. Great funk in the nose, lactic acid, faded McIntosh apple. Wild body, thick with light carbonation, wild yeasts all over the place. Dirty as hell. Awesome cider from the US.

750mL Bottle, poured at CiderDays 2011. Big super Brett-bomb nose. All of the driest, cottony, cob-webbiest Brett all over this cider. It’s not my favorite expression of Brett, with the kind of astringent, biting, aspirin-like character and it completely overwhelms the apple in my opinion. But, that makes it a lot like sidra, so I guess it has a place. Fluffy and super-dry. I was hoping for another shot at other Flag Hill’s, since they’re so well regarded and I can’t seem to get on board, but this just kind of sends my confusion in another direction.
